I've had such a happy week at home taking in all the autumn glory and doing simple things, like baking gluten-free scones and making small home improvements, that bring joy into the home.
Gluten-Free Scones
190ml single cream
190ml milk
1 tsp vanilla
1 egg
3 Tbsp sugar
2.5 cups gluten-free SR flour
Whisk milk, cream, egg, vanilla and sugar until frothy. Add flour to liquids and stir gently until just combined. Let the mixture sit for 5 minutes before turning onto a floured surface. Make a snake with the mixture and then cut it into 12 sections. Place each section in a lined baking tray and bake at 250c/480f for 10-12 minutes.
