Hi Joy, we tried this many times and it turned out great. Also our friends in Facebook have tried it. They were happy as the outcome was good, as well. We don't know exactly what happened. Perhaps it was the rice or there was a little too much water. Our ratio is one cup of rice to two cups of stock. Go to the link for the recipe details.

hi cliane, very true. When making paella or any other Spanish rice dish, don't wash the rice, for it needs its outer coating of starch. and yes, Japanese rice is great. Keep up learning cooking, for sure yo will impress your hubby. Thanks for the comment.

Hi Vicky. You can, but saffron is really a key ingredient. It give the dish a unique flavor and aroma. As with the paprika, it give the dish that reddish tinge. But if you can't find them or don't like them, give it a shot. It will still be tasty. Let us know how it turns out.

Thanks for sharing, again as they have posted before : this is not paella, but a paella-inspired dish. Real paella can only be cooked with a strict list of ingredients and these simply can't be substituted or removed. It's like pizza without the dough : it's just not pizza. In Spain we have several rice dishes cooked in a paella (valencian for pan), but we always refer to them as Arroz de XXX (depending of the ingredients you have at hand). Thanks for your efforts on trying to get it right!:)

You pronounce paella correctly and did the "don't stir it" rule. But call it a socarrat near anyone who's Spanish or else they will mock you a bit saying don't put peas in it unless it's a socarrat and possibly tell you how to make a proper one
