As far as the Caribbean community is concerned, it's racist. A few years ago you could buy oxtail in Toronto, Brampton, Mississauga for $1.99 a pound but as soon as the main stream stores found out black people were the main buyers and consumers they cranked the price up to nearly $15 a pound and more. Since black people are the main consumers and budgeting about meat costs they were basically trapped into paying the higher costs in order to maintain culture based meals in their households. I'm pretty sure that if chicken breasts went up to $25 a pound, white people would be all over it with protests, shouting politicians and extended media coverage on all fronts. It's basically a quiet form of racism and shame on the big box stores.

I would suggest starting on 350' for about 30 min. then reducing it to 325'.

I've used Dr pepper, it doesn't take much but can work better as marinade. I have used Dr pepper, cherry coke or cola marinade on beef for hours to days. I then drain and let meat dry up a bit before cooking.

Try salt and pepper only and see how the real thing tastes. This is the closest to the real thing by the way.

Your recipe gave me grief and embarressment. I attempted to cook it for quests, followed the recipe verbatim. Cooked 3 hours (more than 1/2 suggested) it still was a rock. At the end we threw away and had bread and cheese for dinner.

I am sorry to hear that. I wonder if quality of meat may have anything to do with it? To be safe, next time, I would suggest doing cooking process in crockpot. Start early enough to make sure your meat is cooked to your liking.
