My guess is that he pressed A the frame before his control stick moved out of the deadzone. As a result, Mario's initial movement was primarily composed of the component that was in the direction he was facing. I'm on mobile right now so can't go frame by frame, sadly

I can't tell if the input display is messed up or if it's actually his controller, but when he went to neutral on the stick it wasn't actually true neutral. My guess is, because of this he was expecting an instant turn from neutral, but since it wasn't true neutral, Mario did the slow semi-circular turn (like what you do at the end of Cannonless). Then Simple jumped expecting Mario to be facing down, but he wasn't

I did wonder if that deviation from true neutral was enough to be out of the deadzone and cause him to face that way, but then I figured he'd probably have his deadzone high enough that it wouldn't be an issue. I also didn't notice a turn happening in that direction for the rest of the video. I suppose he might have had his thumb on the stick the entire time and just overshot true neutral by a hair, causing the turn in a weird direction.

Probably because it's usually like that, but the painting obscures the animation. When you have a level that isn't entered via a painting, it's not there to hide Mario reverting to his primal state. This is entirely guess work, by the way
