There is a behind the scenes video of this performance, where they talk about the whole idea. The album version already has some strings in it, so they thought about making a more grandiose deluxe version of the song. BTW I like Ben's facial expression at 3:15 (or 3:52 in your video). That smile says everything.

As an aside in response to your comment about Orchestras and metal - two suggestions for classic performances of Metal bands with orchestras. ARCHITECTS with the orchestral version of their song ‘Animals’ live in studio at Abbey Road which is a similar set up to this video and EPICA with their song ‘ Unleashed’ at their 10 year Retrospect concert where they played with a full symphony orchestra and a huge choir.
