Some people have to understand when it comes down to cooking especially Mexican food, a lot of our grandparents were born and raised in the early 1900 in the United states so they learned different ways how to make Enchiladas, tostadas, menudo, frijoles de la olla etc... there is no wrong way to cook something, personally I love your cooking and keep doing what you are doing!🥰

And she clearly said it was TexMex style, which is not authentic Mexican, and more of an American way of making Mexican dishes. So long as she's not saying it's authentic Mexican food and properly labeling it as what it is, there is no issue.

I like knowing which style it is to avoid confusion but it's not a snob thing, I just spent a lot of my life thinking tex mex is mexican because that is what it is often called. We had an authentic take out place for a while and it was sooo good, a total aha moment. Personally I prefer the more authentic style but it is difficult to find in a restaurant and not easy to make at home so I will make tex mex without shame but I am glad to know the difference. Keep in mind I live in Canada so that is why I didn't know for a long time.

I'm with you, I've never met an enchilada I didn't like. I grew up eating stacked enchiladas, had my first rolled enchilada when I was in my teens, and now I do all three stacked, rolled, and baked. They're all delicious.

I love your style but feel you might like to know that when making corn tortillas for my enchiladas I use a cast iron flat , with out any fat. I just let them bubble up flip and do it again. They are perfect and no oil, and hold their form and texture perfectly. Try it in your skillet without the grease , just to see. You may like it better, you may not. I will share your videos as are wonderful!

I grew up in Falfurrias and these are real enchiladas to me! The haters need to get over it. This is TEX-MEX and of course it is different from Mexican food. FYI, I usually make the sauce your way but last time I tried the Bolner's Fiesta brand Enchilada sauce powder and was really surprised at how good it was.

Hehe I suddenly had flashbacks to making enchiladas at the restaurant I used to work at so many years ago! I need to make these this week 🧀 When I was a kid my mom would basically just stew beef cubes in tomato sauce, add curry powder and a can of French cut green beans at the end, then serve it over rice. I've learned how to make proper masala curry, but that will always be my guilty pleasure 🥰 You can't pick your comfort food 😄

I cook Puerto Rican food a lot because it’s what I was taught growing up. I may make some differently than other people but it’s the way i do it. I caught a lot of hate from “friends” for using dried sofrito. What they didn’t get is I used my homemade sofrito and the packet of sofrito for some extra flavor since I can’t find some of the ingredients here where I’m living to make it fresh like I would if I were in a bigger area. Don’t let anyone get to you. If they think you’re doing it wrong, ignore them. It’s not their business. Have a great weekend.

The first time I made enchiladas, I made the mistake of doing everything ahead of time and refrigerating the nite before...fortunately I did soften the torts in grease before rolling...but they did break down and absorbed the sauce, lesson learned!!!😁 However, they still tasted awesome!!

Hi SM..the enchiladas looked amazing and I bet they tasted amazing..I’m from Texas too born and raised and these are the enchiladas that my whole family have been raised on..and I too love all types of enchiladas but these by far are my favorite way to make them and eat them..so to hell with those that say these are not authentic enchiladas..it just depends on where your from and how you were raised..no big deal..all types of enchiladas from anywhere are delicious as far as I’m concerned..but these Telmex are the bomb..great simple recipe as always which is why I love your channel..stay safe and healthy. 🙏🏼

I'm a Midwest girl. I didn't have my first Mexican food until I was a mother of 2 in my twenties, living in California. We went to a mom and pop restaurant. Luckily Mom spoke just enough English to help me order. She suggested Chicken Enchiladas. I fell in love with them and dreamed about eating them again. Yours look delicious!

Love all your recipes. I'm single, so I cut corners. I make my enchiladas in a skillet. I make the meat and sauce, fill the tortillas, and put them back in the skillet. Pour on the sauce and cheese. Put a lid on the skillet. Cook on low. So good. Thank you for this recipe.

I have stumbled on your channel, and honestly I think I could really cry my eyes out at the simplicity, ease and warmth of anything I see. No they are not, but it also depends on the brand of chili powder you use. Most chili powders in my local grocery store are actually a blend of chili powder and other spices. If using just pure mild chili powder start by using 2 tsp and work you way up from there instead. 😊

I tried this recipe today and it came out delicious! Had to add a bit more water since mine was thicker than I wanted it to be. I also added cayenne pepper to make it a bit spicier. I used leftover rotisserie chicken and seasoned it according to your recipe. But I only had enough to fill the enchiladas and not to top them as well. Still, it came out amazing. Thank you for always providing us with great recipes!

I had a friend in HS whose mother made an enchilada -ish dish. Brown hamburger, add Wolf Brand chili (only Wolf), run the tortillas through a hot boiling pan of water for abt 2 seconds, fill with the meat mix and cheese, remaining meat mix and cheese on top and bake. People wanna talk NOT enchiladas, let them talk about that! This seems like a tasty and easy quick recipe that cld be made after work for dinner with - wait for ppl to freak out - a rotisserie chicken even! Thank you for this vid. I love those Fiesta spices and they make an enchilada blend that I've used a couple times. I may switch to this because I keep all these in the cabinet all the time anyway so it wld be one less bottle. 👍🏻

This is how i make my beef/chicken enchaladas...except im messy and do my tortillas in the sauce.....but do them the same way...my kids love cheese so I add a layer of cheese on the bottom with the sauce and a thick layer of cheese on top. I also add sauted onions and green peppers and pamentos(i know its weird...but it gives a little more flavor because i didnt have enough season one day i used it and worked good) and if I have black olives. If im trying to be quick i dont add all the veggies to it but my kids complain if i dont..lol.

Don't listen to all of those haters. They're just miserable people who are jealous of the way you cook and are looking for a fight. The best way to handle those people is to just ignore them! I appreciate you and your recipes. You cook really well. If only we could all cook like you, Mama. You're calm and organized. When I cook it's chaos in the kitchen lol. Keep on doing you and please continue to make those wonderful recipes that we all love and enjoy from you! God Bless!
