Today we're making sausage and peppers rigatoni. I love traditional sausage and peppers, but I also love to make it with pasta for a full meal that the whole family loves. If you like it spicy use hot sausage or add some Calabrian chili paste. I hope you enjoy the recipe!

Now this one a friend taught me years ago. Peppers and donions in the sauce, smothered over a sausage on a hogie roll, covered with Assiago and popped into the broiler for a second to melt the cheese. Yum! That said, I never thought to slice the sausage, which makes it much easier to eat vs. the full link. So even on something I've been making for over a decade, you're still teaching me something. Growing up in Wantagh until I was 10, my fathers family is from Naples, our neighbor next door, they were from Sicily. Mary, Always had a big pot of sauce on the stove, Italian bread, there were usually meatballs. But, she made peppers and onions a lot and shoveled it on Italian bread. I went to "Aunt" Mary's a lot lol. Thought you'd enjoy a little L.I. story ; ) I also looked up the 'Big Pan' on Amazon, it's there. Thanks

This is exactly what I used to cook for my kids mid-week when I was raising them on long Island, as word got around since I was a Soccer coach the Has, fraus would ask that "if it was ok to pick up their kids from my house because they had another one in Baseball or basketball and practice ended later" I worked 12 hr shifts and had a lot of days off, and I was a cop..So I made the full pound for 4 to 6 kids sometimes (I had twins). Of course, some of the little shits would pick out the peppers. I will never buy another Mini-Van in my life.

A hint from a sausage maker. Put the sausage in a dish with enough water to go about halfway up the links. Cover it tightly and put in a COLD oven, Set it for 375 F (190 C) and, once the oven gets to temp, cook for about 25 minutes. If you do it this way, you will prevent the proteins in the casing from cross-linking and they will be tender every time. I always do this, whether I'm grilling or using the sausage in a recipe. It works every time.

Thanks for this I’m always trying to get the casing tender. As far as the recipe goes, I’d like to leave the can of tomatoes out. Between the olive oil,water and paste with the sausage and peppers seems enough for my liking. I put a tablespoon ricotta in everything on a person to person basis. If you like ricotta but that’s up to you.

I remember watching my Grandad punish 3 fast food cheeseburgers in the same afternoon when I was younger. He was in his early 80s at the time and lived to be almost 100. It’s all genetics man.

@@SipandFeast it was delicious! I unfortunately overcooked my sausages a little (won't do that again) , threw in some baby spinach that needed to be used up in the sauce. It was a delightful change from my usual "spicy peppers & tomatoes" so I'll definitely be making it again!

Absolutely, these are instant clicks for me. Great recipes, a nice at-home atmosphere, and as I've said on another video, the most forgiving Italian cook I've ever seen. He just wants you to like your food, who cares about tradition.

When adding tomato paste, I give my spoon a quick dip in the olive oil first. It helps prevent the paste from sticking so much to the spoon. Not a big deal, but keeps from having to scrape off that bit of paste that won't come off with an easy shake of the spoon.

I've made this thank you for the recipe, I did just cook the sausage in the same pan and used onions and peppers to deglaze and then added garlic. It came out great!

I've made this twice now. Once was for my husband's birthday which he specifically requested rigatoni with sausage and peppers and then again tonight both less than a month apart. This meal is absolutely delicious. It will definitely be a staple in my household. Thanks for the great recipe.

@@NDB-AK Well actually I really don't give a sh*t, other people think about my parenting skills. Unless CPS has an objection. Most people these days feed their kids out of the frozen food section and heat up processed garbage, I was a coach because I don't trust people I don't know well around my kids. and I wanted to make sure they stayed physically active and I juiced Carrott and apple juice in what used to be called an "Olympic " Juicer but is now branded "Omega" because the Olimpic committee trademarked "Olimpic"". They got "Cheat Days" like I still give myself I ' retired at 51, I'm 63 now and still weight lift, run 5k,(I like to say 5K because it sounds better than 2 and a half miles)I play golf and am an active scuba diver, I do some yoga now because things are starting to hurt. I put my girls through 4 years of State University, and they have no student debt. The twins are 26 now. If they get fat, that's on them. You can pick the kale for your kids, and if I'm still around, let me know how things worked out for you.

Just made this for lunch (also leftovers for my night shift driving job). It's pretty straight forward like the video. I prepped the vegetables and sausage the night before which saved a good bit of time. As Jim states in the video, you really do need a big pan because it does make A LOT. It turned out fantastic.....another thumbs up for Sip & Feast.😃

We make our sausage and peppers almost the same way with one minor tweak a bit of marsala wine to sweeten it up. Looks great!

Awesome! I forgot to put sausage in my 2-mushroom cream sauce rigatoni last night and the store had those little red and yellow peppers so guess what I am making tonight? Oh yeah! I always roast sausage on a sheet pan in the oven, much easier and less messy than cooking on the stove! Another hit! Thanks for the inspiration!

Made this for work lunch for 3days minus the sauce. I HAD to come here and thank you because it came out DELICIOUS!!! the water in the onion & peppers trick to steam/soften them up was a good idea. @@SipandFeast lol, exactly what I’m doing. Italian here is spaghetti with a can of tomato sauce. I’ve tried to convince some Sicilian Restaurant owners from back home to move out here and open up. If Iliano’s pizza, Middletown, CT, opened around the St Paul suburbs, like Woodbury, they would draw crowds from many miles around, or Amici’s restaurant with real Italian dining, wow. You sir have made me a hero Dad with my girls, THANK YOU!! If you feel like moving back I’ll be a silent partner with you to open a restaurant...... God Bless✝️

Pasta recipes with sausage are SO underrated, IMO! Good sausages have so much flavour, they automatically make great sauces!! Plus, you can’t go wrong with healthy sauces!!

I know you’re being at least a little facetious but I love when you call this the healthiest channel on KZbin. I hate the way the word “healthy” gets thrown around, acting like lower calories are inherently ethical. My new favorite channel, no bullshit. One note: boil short noodles in less water. You just need to cover the noodles by an inch or 2. Besides saving water and getting it boiling faster, you'll end up with more concentrated pasta water. Win/win/win.

I've made this recipe and absolutely love it, so much so that I'm making it again and bringing it to a Super Bowl party today. BTW, am I the only one who hears your background music in my head when I'm preparing your recipes? :-)

Looks great! I look forward to your videos each week. I use your meatball and meat sauce recipes alot family and guests love it. Is there a possibilty for a midweek video? I'm sure everyone who follows would appreciate one as well. Just a thought I know it takes time to make the high quality recipes and videos that you put forth and also family time as well. Be encouraged and keep the great recipes and videos coming.

I'm glad you're enjoying the recipes. I post 2 times a week to my website as well. If I did just KZbin it would be possible, but for now I like having a few things going on. Hopefully sooner than later I can hire someone.

I love your channel. I’ve tried several so far and they are all amazing. My favorite part is your easy going attitude. “Put in three ounces tomato sauce. If you put in more, it’ll be fine....”.

Three years ago I bought a couple of oregano plants from a Home Depot store here in the Raleigh, NC area. They were labeled as spicy oregano and they are easy to grow. Oregano is a perennial, and it spreads , so I get a lot each summer. It is vastly superior to any

… to any I had ever bought previously in a jar. I believe the spicy variety is a Greek variety … I wish I could send you some to try. I do see the Sicilian type on Amazon and may try some out. I love oregano in Italian dishes and especially on pizza … I bake it Into the pizza dough. I really enjoy your channel and I am grateful for all the fine recipes. My first wife was Italian, but she could hardly cook. I am Irish (from Boston) but love to cook Italian food. Thank you for all your great efforts.

Thanks for liking the channel. I grow oregano too and it comes back here as well. I have never been able to grow something that quite has the flavor of the packaged Sicilian oregano, but maybe next year I will give it another shot.

When I was listening to your college story about the peppers in the jar, it reminded me of my late father (he was Sicilian, lived in Rhode Island) He made it and it was so good...I think it was called Peperonata but I could be wrong. Looking forward to your channel.

Albany has nothing on Long Island or the Bronx. My father in law (Mount Vernon) has taken us to dinner on Arthur Ave and my mind was blown every time! We have 2 restaurants that come close (one is Café Italia) that my wife compares to NYC, but if we want it, yours truly is tasked to make it delicious or adjust my recipe. So, I have come very close with your help and I continue to cook Italian the best I can to improve my execution and ingredients! If mom could see me now! Mom was Calabrese and dad was Sicilian which made life interesting growing up!
