In today's video, we prepared 8 of my mom’s side dish recipes that she learned over the past 35 years.
I didn't cook but I tried to capture my mom's cooking in detail. I hope mom's delicious side dish recipes will warm your table.💛
Please note that we used a wooden spoon when measuring.

👩🏻🍳8 side dish recipes
1. Braised Lotus Root
Wash, cut 2 peeled lotus root into bite-size pieces.
Add salt, vinegar to boiling water. Lightly blanch lotus root to remove bitter taste.
Rinse lotus root with cold water, drain, fry 7-8 minutes with 2T cooking oil.
Add sauce and bring to a boil. (🧂Sauce: 200ml water, 6T soy sauce, 4T cooking wine, 3T brown sugar)
When the sauce reduces, add red pepper and 4T of Chocheong (rice/corn syrup) and stir-fry.
✔If you don't like crunchy lotus root, make more sauce and boil it longer.
2. Braised Tofu
Cut tofu into bite-size pieces. Drain the water.
Apply enough oil and fry the tofu until golden brown.
Chop onion, red pepper, green onion. Place it on top of the fried tofu.
Pour enough sauce and boil it. (🧂Sauce: 120ml water, 4T soy sauce, 1T red pepper powder, 1T sugar, 1/2T garlic, 1T sesame oil, pinch of pepper)
✔Since it does not boil for long, the sauce is rather salty. If you want it to be less salty, reduce the amount of soy sauce.
✔ You can also add or subtract chili powder according to your taste.
When the sauce reduces, add green onions to finish.
3. Sweet and Sour Parae Seaweed
Wash parae seaweed in cold water. Drain the water.
Chop 1/4 of a small radish, 1/2 small size carrot, 1 red pepper (can be omitted), and green onion.
Mix shredded radish, carrots with 1/2t coarse salt, 2T vinegar, 3T sugar.
Squeeze the water out of the parae and mix well with red pepper and radish.
Finish with green onion and sesame seeds.
4. Spicy Dried Squid 🦑
Cut the dried squid into bite-size pieces.
Make seasoning sauce. (🧂Sauce: 2T red pepper paste, 1T soy sauce, 2T cooking wine, 1/2T minced garlic, 4T corn syrup, 2T sugar, 1T sesame oil)
Mix dried squid with seasoning sauce.
Add green onion, sesame seeds, mix to finish.
5. Stir-fried Potatoes🥔
Peel washed potatoes and shred. (based on 2 potatoes)
Chop onion and carrot.
Rub shredded potatoes with 1/2T of coarse salt. Season them thoroughly.
Squeeze out the starch from the seasoned potatoes. Fry in cooking oil.
✔If you squeeze out the starch and stir-fry it, the potatoes will not crumble and the texture will be firm.
Fry for about 3 minutes, then add onion, carrot and stir-fry further.
When it is sauteed for a while, add garlic, 1/2T green onion and saute a little more.
Turn off the heat and finish with remaining sesame seeds and sesame oil.
✔ If the seasoning is bland, add more salt.
6. Spicy Bellflower Root
Soak bellflower in cold water for about 1 hour.
Chop cucumber and onion.
Add 1t coarse salt to cucumber and pickle it slightly.
Make seasoning sauce. (🧂Sauce: 2T red pepper paste, 3T vinegar, 1T corn syrup, 3T sugar, 1/2T garlic, 2T red pepper powder)
Drain the water from the soaked bellflower, add 1t of coarse salt and rub.
✔ This way you can get rid of the bitter taste of bellflower root.
Rinse the bellflower that has been rubbed in salt with cold water. Drain the water.
Squeeze the cucumbers soaked in salt, drain the water. Mix with the bellflower and onions in the sauce.
Finish with sesame seeds and sesame oil.
7. Korean Cucumber Kimchi🥒
Cut washed cucumbers into bite-sized pieces. (Based on 5 large cucumbers)
Boil water with 2T salt. Pour over cucumbers and pickle them. If the cucumber is pickled in hot water, it will be crispy even when it is ripe.
✔Turn once in the middle so that it can be pickled evenly.
Mix 2T glutinous rice and 200ml water to make glutinous rice water.
Mix 800ml of boiling dashi water and glutinous rice water to make paste. Let it cool completely.
Shred a handful of chives and half an onion, add 2T fish sauce, 1T salt, and mix to make the cucumber filling.
In a blender, add 1/2 a pear, 1/2 an onion, 10 garlic cloves, 1 piece of ginger the size of a finger nail, 1T salted shrimp, 500ml water and grind.
Filter the liquid ground in the blender through a strainer.
Mix the filtered liquid with the completely cooled glutinous rice paste. (🧂Add 1T fish sauce, 1T coarse salt, 1t saccharine, 500ml water and mix.)
Rinse pickled cucumbers in cold water. Drain the water. Cut a cross shape into cucumbers.
Fill the inside of the cucumber with the chives made in advance. Pour liquid to cover cucumber.
Let ripen for a day at room temperature.
8. Spicy Pickled Peppers🌶
Rinse soy chili peppers in cold water.
✔ The soy sauce must be removed from the inside of the pepper to make it less salty.
Make sauce and mix it. (🧂Sauce: 1T red pepper paste, 1T red pepper powder, 2T corn syrup, 1T sugar, 1/2T garlic)
Sprinkle with green onion and sesame seeds to finish.
