Replacing an old template with a new template with a new design (moving from purchased template to custom designed template). Same URL structure, old content on new web pages (additional content sections added), same meta data and few 301 redirects. Will it impact organic ranking?

Your content hasn't changed in your scenario. Just the CSS basically. Should be fine. You might see some differences in page speed and UX per se but all in all you should be fine.

I can guarantee you site moves didn’t get easier or more people reading the documentation. There are fewer and fewer of these being attempted because it is so difficult to align the old site with the new site.
