Sisig without vinegar (preferably coconut vinegar) is NOT sisig at all. Coconut vinegar should be the main source of acidity with the calamansi (or lemon) for the fruity tartness. Oh, it is also missing a key ingredient -- pork liver. Traditionally, the "creaminess" if sisig comes from mashed grilled pork liver. Not being a hater here but the recipe shown is what others in the know would call this a "pork salad" -- if they are being generous.
