I like Imperial because they’re vanilla and I like to RP myself. I don’t have innate resistances to fire or ice. So why should I in game, however, within the games context I could gain said resistances through enchanting armour etc

That's not how games work😅 If you buy a game and then delete it you still have the game you just have to reinstall it in the store
