My husband is Vietnamese and he approves this recipe! He said this is VERY close to his grandmas beef stew! Very easy to follow and straight to the point! I have made this many times using your recipe. I cook it in the instant pot for 38 minutes. Meat and carrots are very tender. Thank you for sharing.

I made this many times without the tendons and its a YUM and fail proof recipe. I fill the pot with just fresh coconut water and that gave the soup an extra kick of sweetness

Hi friend, you can add potatoes and celery to make a really hearty stew. Add these vegetables at the same time as the carrots. The cooking time is the same. Enjoy!

I like how you can add the silicon cutting mat on top of the wooden chopping block. I have silicon ones similar to yours, but they always slip and slide while I am cutting. :-)

do you not add the tendon in the slow cooker? I didn't see you adding it & i was wondering if you add it at the end?

Hi Jenny, the beef tendon was already in the bowl when I added the cubed chuck roast. I marinated everything together. I cut the tendon smaller because I like smaller pieces but feel free to cut bigger chunks. Hope that helps!

If I wanted to thicken it a little how can I do that from the slow cooker?

Make a corn starch slurry and add to the slow cooker during the last 15 minutes. Stir gently. It will take a few minutes to thicken. Add more or less starch mixture depending on how thick you want it. Enjoy!
