I have the SnS 2.0. The water part is removeable, and the grate on the bottom is no longer square mesh, but it's a flat piece of steel with long ovals cut into it. Works well, but I think the open bottom version might work better for me because I've run a few overnight cooks and the temps seem to slowly creep down. I believe that ash was building up on the SnS grate. Since it sits directly on your charcoal grate, and the openeings don't match with the Webber charcoal grate openings, I think some ash or smallet unburnt charcoal clogs it up and restricts airflow. Just a theory! But I think next time I will use some nails or something to act as spacers between the bottom of the SnS and the charcoal grate. Also, the webber kettle has three lower vents, and typically, if you control air from the bottom, they are opened to very small slivers. I believe that over time the one under the SnS can get blocked, which causes less air flow which means dropping temps. Next time I think I will actually completely block off that vent (I arrange the grill so that one vent is directly underneath and the other two are under the meat) so that airflow only comes from the two father vents, and so I'll control those vents and they will not get ash build up blocking them. In theory.

I've had mine for almost 2 years now. Used it for a year and a half. For the past several years, I cook salmon whenever I cook steak. I use this in reverse more often than not; I always fill it with water, I use the big open side for dumping the charcoal, and I use the 1/3 side for finishing the salmon while my steaks grill over the other 2/3 side of the set-up. Works great. So, a couple of times I've used it to smoke ribs, etc. It works great for that also. Fire on the 1/3 side; ribs on the 2/3 side. Always use the water option as that helps to mellow and control the temperature!

I bought my first Weber grill on Monday the week of Thanksgiving 2018 and on cyber Monday I called ABC with questions about their products and wound up placing an order. I've done two cooks with it so far and I'm very impressed with the results. Not only that, they are a great company to deal with. Great product in my opinion.

I agree, If you enjoy cooking on a Weber Kettle, these kinds of attachments can help if that is your cooking style. Only add ons I own are a Vortex and a Pizza kettle ( yes it works) . The sky is the limit when cooking on a Weber.

I'm not jazzed about the warpage after just 13 months. I've had my Homer for 19 years and have had no warpage. I think the slow n search should last just as long. I'm not buying it. Thank you for this review. I love your videos and Annie too!

I think the warpage is becuase he used it several times without adding water in the resevoir. I've had mine for about 5 years and it shows no warpage. I don't use it for everyday cooking. I just use it for smoking and keep water in it during the cook.

I was surprised to see how warped yours is, I've used mine consistently for a year too and it is still the same shape as when I got it. I love mine, especially for how easy it is to clean out the ash from the last grill session through the grates in the bottom.

Mine warped also in less than a year. Didn't expect that for that price. I think there new 2.0 model will not have the warping problem,because the water trough is detachable. Hope mine continues to perform.

One of the issues I have with the fire brick and water pan method is, if I'm shooting for a cooking grate temp of 225, and I put a water/drip pan in the bottom of the grill, the temp down there's not going to be high enough to generate much steam. Especially if there are fire bricks in the way. We all know how much of a difference there is between the top of the lid and the grate. I'm thinking there's even more of a difference between the grate and where the pan would sit. My SnS is ordered, can't wait to try it out. Good job on the review.

I got my Slow N Sear for Father's Day this year and I LOVE it. It really does create a true two-zone environment in the kettle, and I haven't taken it out of there since the day I got it. Temperature control is super easy and you can do long cooks with ease.

It works well,but I'm a bit put off from the serious warping. For the price,warping was not anticipated. Too much warping for the price. Had they tested it longer they may have at least pit a warning on their site.

The slow N Sear with the bottom, placed on the charcoal grate will not allow the ashes to fall through and thus will stop the airflow causing the burn to stiffle out.

I'm one of those who thinks the slow and sear is way overpriced and to be totally honest I think it's unnecessary. You can use a to little charcoal baskets that's Weber sales I think they around $17 and you're good to go. I put your water pan in there for $0.75 or less and there is my slow and sear. There is no way in this world I'm ever going to put almost $200 into something like a slow and sear. Yes I would love the opportunity to try one but being highly skeptical that I would find true value in it. Thanks for your 13-month review I like your videos you're very honest and opens you're not trying to push anything or us to buy you just give information about where to purchase some items. Keep up the good work happy grilling

Good points Tim. However, I'm the type of fellow who is quite content with a brick and a water pan. I'm not destitute but need my hundred and fifteen bucks more than I need a grilling gadget that does what a water pan and. brick will do. That seemed to be a very fair and honest review.

Big Lew BBQ 304 stainless will not rust, I used to sell this alloy for corrosive environments, not everyone gets to work around, centrifugal, investment and sand casting foundries... Also purchased two of the new 304 stainless grill grates with the larger flaps...they don't get stuck like the regular cheap ones that come with the grill... So Let's cook some Great Q.....then eat it!!!

2 fire bricks are about $3 each and $1 water pan. I can easily get 12 hours out of a load of charcoal for smoking. temperature will hold between 225 and 265 the whole time. Why spend almost the cost of the kettle for an accessory nobody needs.

I was given a Kamado grill so I've not been using my SnS, however I still believe it is excellent. One thing I learned with the Kamado, which recommends using lump charcoal, is that ... lump charcoal makes very little ash. And one issue I had with the SnS (I have the 2.0 with the integrated grate at the bottom) is that ash tends to gather in one place in the kettle. So if you've set your lower vents to a slow cook, then do something foolish like go to bed, you'll notice that temps will start to drop after a few hours ... I BELIEVE that it is because ash falls out of the SnS and piles up under it and if one of your "slightly cracked open" vents is under it, it will clog with ash, thus changing your airflow. So MAYBE using charcoal lump will avoid that issue entirely?? I was going to try (but got the Kamado grill before I did) actually blocking off the one vent under the SnS (Weber kettles have three equally spaced lower vents) with high temp aluminum tape (on the outside) so that you control the temp with the two remaining lower vents. The blocked vent would then not factor in and if ash builds up, then that's OK because you factored it out anyway. The Kamado works great ... but so does the Weber with SnS. If I wasn't given the Kamado, I'd still be very happy with Kettle + SnS (and charcoal lump, or maybe blocking a vent).

What's the most famous words at any BBQ gathering? Is it done yet? No one really gives a shit if you had a brick in there or a firebox. The mainstay of people I serve focus heavily on the location of the paper plates. But IMHO for the diehard kettle peeps the SnS is actually a really cool item, I don't own one but I get it.

@Makla Bouhlel Drip n Griddle ... I use a piece of tinfoil to block any airflow. As for a griddle part ... I have many pans in the kitchen. I've also seen some people DIY a drip n griddle by buying a PIZZA pan, and cutting it to fit. $10.

I'm concerned about the warped lower lip not allowing the drip n griddle to lay flush with the slow n sear. Did you use 2 slow n sears in the video? Early in the vid I saw the warped lower lip. Later it was missing.

The warping hasn't caused any functional problems that I've noticed. It still fits in the grill fine and it cooks great! It's the same Slow 'N Sear throughout the video. I only have one.

Nice honest review. I'm not your biggest fan but at least you're honest. It seems like you're neglecting your grill and equipment, to be honest. get a decent cover for your grill and keep the grates seasoned with oil so they repel water and don't rust. Take care of your stuff, Tos!

I personally think I will stay with my two bricks and heavy duty Aluminium (acts as the drip tray), and it's done me well, I also own WSM as well. I do have the Slow 'N sear charcoal holders without the water reserve, but put little tin pie holders with water under the meat I am cooking. So far so good, but thanks, I probably wouldn't spend that much money for those products...unless I had Disposable income to do so. But hey...great video and I'm still on the brick side. LOL

I enjoy your channel but, this product to is just a waste of cash. If adrenaline barbecue would’ve sent me one sure I’ll use it although I’ll stick with my fire bricks and my foil pan & a sheet of foil on the bottom to block the excess heat, if I want something nice I’ll buy a new truck.
