The reason why the (observable) universer is depicted as a sphere, is because it is a sphere. It is just the collection of everything that was ever close enough to us, that information (i.e light, etc.) could have reached us over the lifetime of the universe. As the speed of causality (the speed of light) is fixed no matter in which direction you look, the max distance for such stuff is the same in all directions, which obviously gives us a sphere. But it isn't a physical border like a wall, more like the horizon here on earth. It just the border of what we can see from where we are, it's not like we could walk up to it and touch it XD. As for the parts of the Universe we can't see. We have no good way of telling it's shape or size, but it is either infinit or probably a sphere (because that is the simplest shspe and we have no reason to believe it has a different one). Now in physics there is also a question about the "shape of the universe", but that has to do with how geometry works in Spacetime on those scales (wether space is curved i.e. wether parallel lines stay parallel, etc). Which can easily be interpreted the wrong way.

You are not exactly in the middle, there are more than a billion things in the universe, you can literally pick anything and there will be something in the middle between another random thing, it's just math.

Yes, even if there's a "Creator" it shows that we are practically dust in the grand enormity of the universe, we are nothing but that doesn't mean that we don't mean anything, we have meaning to our families to our brothers and sisters and that is a privileged enough.
