Good info! I have raw packed a lot of things, including regular potatoes, but never sweet potatoes. But that muffin recipe sounded great so I'm off to watch that one now!

Good video! As for your stovetop canner... treat yourself to a weighted jiggler instead of the weight that comes with a regular pressure canner (other than an all American canner). It'll take all the stress out of "babysitting" your canner. Lisa @ Suttons Daze suggested this when I first started pressure canning. I don’t have to worry about getting my gauge calibrated & its so easy to use. I got mine on Amazon. It was somewhere around $16.00 as I recall. Best thing I've done for myself in a long time!! If you have a failed canning project, you want that seal to break so you know. If you keep the bands (rings) on, it will give a false sense of security. Last year, I had one green bean jar break its seal sitting on my shelf. When I went to crab it, it had mold growing in the jar. I knew to toss it. It is for safety. Thank you for watching!

I saw the Purposeful Panty video & she boiled them for 8 mins. before canning them. Is it ok to skip that? Just asking. TIA

Yes, you can raw pack based out of the USDA canning book. Many people prefer to parboil (what she did) because it looks nicer in the jars long term especially with white potatoes.
