Small tip. Cure with the bone, then smoke the bone seperate with trimmings. Makes for a great soup base. Awesome job, I’ve been doing hams for a while, this looked great!

Merry Christmas Brad et al. I went a different direction and smoked a slab of beef plate ribs for my Christmas dinner. As I was prepping the meat for the dry brine the day before smoking, all I heard in my head was "Pat it dry...(ding)". Seasoned with kosher salt, Saigon cinnamon, black pepper and chipotle powder. 5lbs at 250 - 300 on my Weber took about 7 hours. Absolutely slayed it.

Nice. Love me a home smoked ham. Adding humidity helps push the internal temps up vs raising the temp of the smoker when cooking a brined cut of meat. Increasing temps lowers rh and it actually takes longer to cook risking drying it out. Look up smoker wet/dry bulb. It explains it a lot more. Also, using sodium erythorbate helps even the color out. Pretty optional though and why add more ingredients than actually necessary? Loved the video.

After deboning, before brining, you could dunk it in a transglutaminase slurry and stuff it in that hamsack so the proteins will bond and you'll have a nice solid boneless ham

What percentage of cure are you using for wet brine?. Meat weight or water volume ?There is so much confusion online with wet curing in comparison to dry cure.

I do not have scientific evidence, but it is understood that Nitrite begins to degrade when heated to temps at 130F and above. Do some research, but be advised. I say let your brine cool then add the Cure #1. I have found it dissolves just fine in cool/cold water. Very nice looking ham, though. Good job!

i could have used this a couple weeks ago, but hey. i got through somehow curing/injecting/brining within a week for a 23 pound ham and made it to the table within a week. a christmas ham miracle, indeed edit: you get a like for "most snake in boot time of the year"

I was unable to double smoke ours this year because of what I call GA snow(rain), but I baked ours low and slow with a maple rub then glazed with a rum cherry and orange pineapple juice glaze with the glaze packet. It was delicious and so tender, now I'm saving the bone and meat on the bone for collard greens on new years
