I was only an hour away from the restaurant that very day and had I known you were making that particular dish, I would have driven over. I love this food and the care to make it "very real" fare. Another nice touch guys!

Tasty piece of meat you can't easily find in my shops. Two upgraders. First when the cabbage is boiled, stove an half apple in butter and add the cabbage. finish with some drips of fresh lemon juice. I don't use wine vinegar for my red cabbage but my mom did.Second and you will be surprize is to do a slice of fine chopped smoked bacon in your sauce pan and let quickly get some heath....another sauce dimension. Bon appetit !

You made this look so easy, I know I can do this meal in my own kitchen! You didn't say (or I missed it) how hot your oven was when you put the smoked pork chop in it though. Was it 400°? love your style!

I used to see smoked pork chops in the meat counter right next to the regular pork chops all the time. But it's been a few years since I have seen them packaged and out. I wonder why?

Look'n good DJ. I know this video is about 8 years ago however, Bob on the camera should follow the cook's hands regardless of when he's speaking or not when the hands are doing something. No one can see what's going on with the stove or cutting board when the camera is pointed on the chef and the hands are preparing something. If all the cook is doing is talking, then the camera is best pointed on the chef but mostly, only then. That makes a better show and tell video for most of the viewers who are searching for how chef's do what they do.
