Best pairing that you may love, smoked brisket ( I happened to try this with American wagyu on the Big Joe) and kimchee on the side. The rich fattiness cut with a few types of kimchee had people giggling with joy how good it was. It was two days work, and by the end I just said " I have kimchee,, probably fine to not make anything else", and it was great.

I’d love to see you do a spatchcock chicken on the smoker or grill. We get a whole cow from a local ranch every year for our freezer so I cook a lot of beef but I’m trying to work more chicken into our lives before we start raising our own meat birds. Suggesting an alternative method for cooking these ribs indoors might be welcome. I don't have, nor will I ever have (unless I win the lottery), the great outdoor options you have for grilling. I cook country style pork ribs indoors and they're delicious. Well, just a thought, but I can't be the only one without a big beautiful Traeger like yours.

I like to do porksteaks on about 225* for appx 5 hours or till they literally can no longer hold themselves together. Covered for the first 4 and let the fat get nice and crispy. Just a nice layer of season salt or a full on bbq smother. I think I like it better than ribs.
