Last year, I found Tom when searching for info on the Yoder. I wanted a MADE IN USA smoker and though I'm in Denver now, I still have roots in Kansas, so Tom being in Wichita and Yoder being in Kansas... It all fit!! We love our 640. It was our gift to a new home almost a year ago. Thanks Tom!! Thanks ATBBQ!!

@@jaypuck6912 I can't tell you how many dishes Chef Tom has taught me how to cook. I knew nothing about grilling other than steaks and burgers, and even those weren't that good. I can effectively say that Chef Tom and this channel has changed my life, as gatherings in my home have been centered on these recipes for the last several years. I started cheaper with a Traeger about 18 months ago, and it served me well. I recently had some critical performance issues with it and decided to invest in the smoker I've wanted all along. It will be a fixture in my back yard for many years I'm sure. Thanks for your story!

I got my first order a couple of weeks ago from y’all and I’ve already used a couple of videos to make dinner for my family. I mostly use the videos for technique and ideas but now that I have many of the rubs I’ll be doing more. I very much appreciate these videos. I noticed y’all haven’t done pork steaks. During these times pork steaks are one of the things I’ve found plentiful at the grocery store. I made them on my offset and Weber. They’re a family favorite now. Scotch eggs would be a great one too.

I grilled pork chops and pineapple last night. Today chopping up leftover pork tossing with some freshly grilled onion and making a chunky salsa with the pineapple. Happy day.

Chunky salsa with that grilled pineapple, lime crema, got a pan ripping hot tossed in onions seasoned with cumin, coriander , and smoked paprika, tossed that around in the oil then added the cut strips of grilled chops. Served on toasted white corn tortillas. Quarantine Taco Tuesday not too shabby.

Tom and crew, I love the channel. I suck quite badly at cooking steak. In our family we have some who like to med rare and others who like to closer to well done. I always struggle to cook to everyone's preference. I did recently acquire a sous vids but we haven't used it for steak yet. A video on cooking a steak would be greatly helpful.

Are rubs and seasoning blends better with salt already in them? Or are salt free ones better so you can better control the amount of salt?

Great question. I find most of our rubs to be pretty much ready to go, when it comes to salt. When I want to cut back on the salt I just cut back on all of the rub. That said, salt free rub is a great way to have more control. Thanks!

What temp do you wrap?

I wrap at the desired color and bark development I'm seeking...around 3 hours as per chefs instructions. Then watch temperature for approximate doneness, but tenderness is really how I gauge when it's ready to pull. 6-8 hours is a typical, total cook time at 300°F for a pork shoulder butt like this one. BBQ is more about the time cooking versus temperature, since quality of the animals will always vary...fat content, connective tissue, age, etc. My best advice is don't rush it and if you're cooking for a crowd, start earlier to let the meat cook. If it finishes early, leave the shoulder whole, you can keep it wrapped up and in a dry cooler or oven for a few hours and it will stay hot until you are ready to pull apart the meat. Hope this is helpful.

Recipe Report: We made these tacos a few weeks ago. We pretty much followed the recipe exactly with one substitution. We used Malcolm Reed's Grande Gringo for the rub since we had it on hand. The pork was great. The salsa was great. But when you put the two together, holy cow! This is definitely a case of the whole being greater than the sum of its parts. They were delicious. Everyone loved them. We'll definitely make these again.

So is there a good rub without the sugar and I’d make this without the pineapple and with hard shell tacos as I dislike the soft raw ones, it’s a texture thing. Without the pineapple, sugar rub and soft-raw shells that look good.
