I remember my dad trying to cut up beef from the cows he had on his farm. He wasn't the greatest at that, but the beef was still great. It's definitely good to know things like this, in these times. You did a good job of separating that beef into different cuts. Cheers, Joe! 👍🏻👍🏻✌️

I’m a butcher in a small town grocery store. I worked at a small slaughter processing company, before working at a grocery store. Got a lot of good pointers how to sell and break up a sirloin butt. I take the baseball steaks and sell them as bacon wrapped sirloin , which sells really good at a good profit. Plus stew and my sirloin steaks. Rest I add to the burger grind no waste hardly .

Be careful and make sure you know what you're buying. I've never seen a whole top sirloin at Sam's. They carry whole sirloin tip roasts but that's not the same cut of meat.

Yup, I've seen the strip roast which is where the New York steaks come from. Great cut of meat but way different than the top sirloin butt. 👍
