The green algae growth in the water is either duckweed or azolla. Read about them and you can see you can feed the snails with it

Is the floor of the greenhouse concrete? Cos snail predators can travel through the soil. I will suggest you place bricks to walk on all over the greenhouse, by so doing you can prevent people from stepping on a young snail. Sorting may likely be a problem with this practice too, but the growth rate and less management are worth it.

Not just in Africa alone, so many places in the world eat snails. It's slime is also harvested for cosmetic products/skin care. Shells of snails are rich source of calcium for animal feed products and plant fertilizers.
