Inspired recently by the Naan bread pizza at Cornucopia in Grantsville, Pa. With balsamic reduction drizzle, Feta, caramelized onions, bacon and figs. Thought it sounded weird, tried it and it was Wonderful. Went home and made it several more times. Used prosciutto, different cheeses, dates etc. what fun! All of them were good.

Gave this a try since I had everything already except the kumquats and the blender. Mortar and pestle made quick work of the dressing though. Did the Pistachios on their own at first after blanching to get em down fine enough. Loved it, great recipe. Though I'm thinking of making a spicy version for my own tastes after trying a bit with chili crunch instead of quinoa.

chili crunch would be awesome in this. great idea!

I have the worst luck! Just returned to Canada after visiting my daughter in Somerville near where Sarma Restaurant is. So disappointed! This looks great and I will encourage my daughter, who has an interest in cooking and has previously taken courses in Toronto to look you up and take a class!! BTW I really enjoy your videos Helen!

This was incredibly delicious. I had a first crop of snap peas from my container garden ready to harvest, so I made a half recipe. The pistachio dressing was so good I ate it on toast because it was just that good. I didn’t have kumquats, but some Meyer lemon juice and tangerines were a good substitute. Definitely a keeper!

Please test the pistachio flavor theory! I have a dressing idea that you might want to play with... It's actually something that I came up with myself but maybe it's nothing new. I use nutritional yeast as a base of my salad dressing. I add to it some lemon juice and just enough water to form a thickish paste. Then some olive oil, salt and pepper. It really allows to cut down on oil because not much is needed and it has this cheesy/nutty flavor that I am obsessed with. I'd love to see your ideas for its use and maybe some improvements.

Thank you, Chef Rennie, for sharing this recipe with us. I love salad and I am always on the look out for different dressings, incidentally, I also love Mediterranean dishes so this just hits the spot. I know pistachio is generally the nut that is native to Mediterranean cuisine, may I substitute it with another kind if I do not have pistachio? thank you so much.

Could you please share were i could buy the spatula for the Vitamix? Love Vitamix but that inability to scrape under the blade is a major fault. Love your channel and your clear and concise explanations. All the best from CANADA 🇨🇦
@Dinoximus2 жыл бұрын
This particular spatula is a Dutch invention and the English term for it is a bottle scraper. I don't know where you can buy them in your area, but hopefully the correct term will help you google it.

Tipp: for not to struggle to get delicious pastes out of the mixer: Use the small vitamix - it has a cup-shaped container that has to be turned upside down for mixing. It makes things incedibly quick and easy! After pouring/skimming out 95% I always add a splash liquid, shake and mix 3 seconds, and then its easy to pour the rest of the good stuff out. I lose almost anything of the ingredients and it takes almost no time and no effort to empty the mixer!
