Oh yea ya old wenchman, amazing eating havent had one in a long time. Interesting to see how everyone has a different ceviche recipe. Much Respect Reed!

Yes! I’m from California but my family is from Ensenada. I can’t tell you how many times I’ve been disappointed by restaurant ceviche that has 0 lime or even worse cooked or mixed with vinegar. I grew up eating ceviche cooked with lime only, lemons work too! Cilantro, cucumber, tomato, onion, jalapeños. Our style was a tablespoon of ketchup and some tapatio. But Clamato works or even no tomato sauce/ketchup is fully acceptable as long as it’s cooked in the lime/lemon. Well done my friend. I even like the orange at the end I gotta try it

i used to have just raw fish dishes like sashimi and sushi with wasabi and soysauce! it was great experience to have this beautiful dish in my life! thanks for great recipe!

Thanks for sharing. Will definitely give this recipe a shot. I’ve tried the orange mix with lime but never lemons. I’ve tried chopped green apples or pineapple mixed in with the veggies and love it. Such a great treat.

Not mentioned, but you want to make this is a "non reactive" container, ie no metal/ss bowls! Glass is best ;)

Would you say deep water fish are safer for sashimi?

No I wouldn’t. Most deep water fish have a springy texture that isn’t good for sashimi

Amazing recipe, the citrus looks like it cooking the fish, but it actually cures the fish but either way it's delicious 😋

Why would you want to fully cook fish in a ceviche? The acid is to season as a dressing to add tang, not to cook the damn thing. Americans. 🤦🏽‍♂️🤣🤣

@@mpotter9944 the best ceviche comes from Peru my friend. Made the authentic way. This is The Floridian/US/FDA Approved way. Cook the fish all the way through, like a well done steak instead of perfect mid-rare. All good. To each their own.

Aloha. I’m American. There’s zillions of ways to do ceviche. I don’t marinate mine over an hour. Let’s face it, most people who eat this also eat sushi, sashimi, and carpaccio. Everyone makes their own depending on access to ingredients and taste.

You say Americans but this is a Mexican recipe. I have family in Mexico that taught me a very similar recipe. This is the common way it’s cooked there. Also, do you not eat sushi? Fish can be eaten eaten raw. Broaden your horizons and stop judging
