Soft Milk Dinner Rolls / Tangzhong Method / Roux
Super soft, fluffy and delicious!
Great for Thanksgiving or Christmas dinner!
Tangzhong bread began in Japan. It’s popular in China & Southeast Asia and now is famous around the world.
Can be stored for 5 days at cool room temperature.

Tangzhong ingredients:
86g whole milk
14g bread flour
Dough ingredients:
Prepared tangzhong
328g bread flour
14g powdered milk
45g sugar
5g salt
4g instant yeast
124g whole milk
1 large egg
45g unsalted butter
Instructions:
* Prepare tangzhong/roux - in a small saucer whisk milk and bread flour until no lumps. Stir over low heat until it gets thickens & cool. Reduce to about 75g.
* Mix bread flour and powdered milk.
* In a mixing bowl stir prepared tangzhong and milk.
* Add sugar, salt, egg, yeast and stir.
* Add flour & combine.
* Add butter & combine.
* Knead for 8-12 minutes until smooth and elastic.
* Check window pane.
* Cover and let sit in a warm place for 1 hour.
* Divide dough into 15 equal balls.
* Place dough balls in a pan 12.5in x 9in lined with parchment paper (or butter pan).
* Cover and let sit in a warm place for 1 hour until double in size.
* Egg wash - 1 egg & 1 tbsp milk.
* Bake in preheated oven at 350F/180C for 20-23 minutes until golden brown.
* Enjoy!
