வணக்கம் உங்கள் இட்லி செய்முறை நன்றாக இருக்கு. ஒரு வேண்டுகோள் சாப்பாடு செய்யும் பொழுது விரல் நகத்துக்கு வர்ணம் பூசாதீர்கள் . அந்த வர்ணம் எப்படியோ சாப்பாட்டுடன் கலக்கும். அது உங்கள் நலத்திற்கும் உங்களை சுற்றி உள்ளவர் நலத்திற்கும் கேடு தானே .

Ila, if we r taking batter from top layer (more fermented) then the idlis are being soft and spongy.. Then wat about the rest(batter in downside) ???if we use tat then It won't be soft rite??

For dosa10 hour fementatio and for idli 20 hour fermentation is it correct and is it all right to leave batter ìn room temperament for 20 hours for idli from Sri lanka
fenugreek seeds to be added little more...so that dosa will turn golden colour...dosa won't be nice without fermentation... idly need not to cook for 15 to 20 minutes...8 to 10 minutes enough...if you cook more, idly become hard..so please try to do in this way also... convey the correct information as beginners will be viewing your posts...

I just add one cup of idlii rava to one cup of urad dal.The idli is so soft and it is healthy as the rice quantity is equal to urad dal.Even if you eat 8 idlies you won't get the belly, and you will be hungry with in 3 hrs.

The iddlies look super. But I was not happy to see the dosas! Why? Albeit one can make both idly and dosa out of same batter (I would say for convenience), if you really want a very crispy dosa like the one you get in restaurants, the ingredients of the batter must be different. I am saying this from the experience and also got it confirmed by various chefs from various restaurants. For acrispy dosa, the urad dal content should be much less than the one used for idly. Any comments, friends?

There are two different types of parboiled rice. One for cooking rice. Other one meant for preparing idli /dosa. You have to specifically ask as idli rice.
