What did you do after removing the batter in a glass bowl? Cool it and then you keep the prepared dpugh in the fridge to harden? If yes, for how long?

Hello, dear friend, if your sohan is halwa and the sohan is not crispy and brittle, you did not do the dehydrating step of the sohan well and the dough still has water.
