Studies show that people who don’t use gloves in the kitchen wash more frequently. Workers have been known to be careless with handling contaminants and returning to food production with the same gloves. As for the oil, it depends what kind they’re using. Several commonly used oils are that darker colour, so it’s hard to judge by a video if the oil is used, or fresh. There seems to be a large number of amateur food inspectors in this thread 😅 The oil isn’t foaming, and the chicken isn’t browning too quickly, which points to clean oil.

It's surprising how many people have no idea what toasted sesame seed oil is it's very delicious used in many Asian dishes around the world and I use it a lot and I'm not Asian I'm African-American but I love Asian food!!

They are clean people and their equipment and it looks like they are using peanut oil which peanut oil doesn’t burn quickly and you can also use it 3 to 4 times before throwing it away, that’s all I cook with and it’s healthier for you suppose to vegetable oil or corn oil

I get fed up with the no gloves comments too, I run a kitchen in the uk, we have a 5 star cleanliness rating after our inspection, and we only use gloves when doing chopping onions or garlic and such things, not to keep the food clean but to stop our hands smelling, frequently washing hands is the best practice! You can see how meticulous these two are and the shine on every item of equipment! They are clearly hard working, plus don’t you think people would vote with their feet if it was unclean? They are in the open for all to see!

How many days do you use the oil? It should be used for a few days only. So that your buyers will not get sick especially you are cooking chicken skin.
