My 81 35 hp Evinrude runs much the same way. When I close the choke door rpms jump well into the mid 5000s plus and the boat planes out. I have this gasket in my kit and I KNOW I DID NOT put it in. I looked my go to marine parts explode view form Crowley Marine and it clearly shows this gasket in the parts view. Another carb removal, starter ,linkage etc. on the beach. I saved this video and will come back to it and comment for all to see Thanks to Jason for being good enough to document his struggles and to give me hope too!!!!

Awesome to hear. Yeah that little gasket in the venturi part of the engine is tiny but critical, without it air get sucked in. Led to years of pain but happy to say its going strong now! Let me know how you get on!

So what was the issue? Float was set improperly?

Full history in the other comment I made. Venturi small gasket was missing one of the carbs causing an air leak

Just after posting this the issue was solved! See full history here: forums.iboats.com/threads/1979-55hp-johnson-fixed-jets.758482/ The solution turned out to be a little washer (gasket) part 316332 missing in the lower carb in the part that goes up in the middle to the venturi. I must have forgotton it when I rebuilt them 2 years ago. Put on a new one from a rebuild kit, reassembled and it ran like a dream perfectly up to 24 knots. Hope it helps others!
