When you're plotting a table of functions, Mathematica first evaluates the table and then plots the result. Evaluate[ ] tells Mathematica to plot the functions one at a time. The end result is that without Evaluate[ ], all of the functions are the same color, and with Evaluate[ ] you have a variety of colors.

It's mainly for aesthetics, but also allows to see the different functions.

That's a good question. I haven't really tried. Does FullSimplify[ equation ] work? I'll have to play around with it.
