Since you like the potato skin, why not scoop out all of the flesh of the potatoes leaving a small amount at the skin to keep it from tearing. Just make your mashed potato filing as you want and serve that way, or cover and freeze for whenever you need the dish. Then cut the halves in half again and turn them into potato skins. Freeze individually on a baking sheet and place in a container or freezer bag for when you need a quick appetizer or have appetizer night for dinner. This way you stretch your potatoes further. Also, if you do not add the bell pepper, you can even use the frozen mashed potatoes for many other dishes. I turn mine into twice baked potatoes ( cheese, sour cream, cooked bacon, diced green onion, butter and little milk)Then freeze for another time, potato soup, potato patties or just stuff back into the skins for twice baked potatoes to go with a piece of protein. Just thaw them the night before and they are ready to be baked. They heat real well and quickly. Just some different options. I love using any leftover cheesy cream of broccoli soup to top my potato and then top with some canned onions and a little more cheese. You can even dress up the basic baked potato to serve to company with a seafood cream sauce…shrimp, scallops, a non fishy tasting fish, etc., sprinkled with some fresh chopped parsley. Oh so good! I would get this from a little restaurant near college campus once a month…it was definitely a treat.

It’s lovely to see you back - the recipes are absolutely brilliant, especially the taco one at the end - I used to shop at Waitrose online but have recently discovered Iceland delivery service. It is brilliant so much cheaper quite a lot of variety okay not so many ready meals that are fresh, but it’s still really good- have you tried the yoghurt, coriander and chive dip - it’s just Greek natural yoghurt, half a teaspoon of honey squeeze of lemon juice, season salt & white pepper chopped coriander, chopped parsley, or chives I use parsley mix it altogether - it’s lovely on toast is a dip or in a sandwich or salad - sending loads of love and hugs to you all - Xxx Xxx
