Hello my cooks! My name is Marisa, I live in Italy and I love cooking Italian style!

Italian Wine Cookies
Ciambelline al vino
Recipe
½ cup of white wine or red
½ cup sugar
⅓ cup oil ( i used corn oil)
¼ tsp salt
½ tsp baking powder
A dash of baking soda
2 ¼ cups flour
Sugar for coating about 1 cup
Optional: ½ tsp anise seeds
Preheat oven to 350 degree
In a medium size bowl add wine, oil, sugar, salt, baking powder,
A dash of baking soda, if you are using the anise seeds.
Slowly add your flour a little at a time this will incorporate into your wet mix, has it comes together , do not over mix when the mix comes together it done.
Your dough will be soft, cut off a piece to form your log about ½ inch no bigger about
6 inch and join them by closing the ends press a little and it will close overlap them.
Dip them into the sugar you have placed in a bowl coating just one side, place them side down without the sugar on your baking sheet.
Bake them from 25 to 30 minutes till they turn just golden around the edges .

I am not a wine drinker and I'm always confused by which wine to buy for recipes. I know you said "dry white" but can you maybe tell me what you use so I can buy the one that works? Thank you so much! I'm really looking forward to trying your recipe.

Hi , yes there are so many wines, but choose the one you would drink or serve, dry white means i mentions, not a sweet wine usually it’s in the dry white wine section, hope this helped . Let me know how they turn out.

I followed the recipe exactly using measuring cups meant for the dry ingredients for the dry ingredients and measuring cups meant for liquid ingredients for the wine and oil. My dough was rather oily. When I was forming the rings they were very loose, and when I tried to dip them in the sugar they tended to droop getting to be more the size of donut rings, then cute little biscuit rings. If you try this recipe I hope you have better luck. I don’t know what I did wrong.

Hi thankyou for this problem, sometimes the oil may vary and gives you a wetter dough a little flour by the tbs. Till the dough picks it, up but i will be changing this video and recipe soon, for now i have been using a Pinterest recipe hope you can look at it , its a smaller batch but better, its under Wine Cookies an Italian Kitchen by anitalianinmykitchen.com . Give them a try, let me know ) i hope after the holidays to make a new video on KZbin.

Nice video. I'd let the dough rest 15 minutes before rolling and forming the cookies.

No I just roll into the sugar ne place it in the lined cookie sheet. Thank you for your comment

The recipe looks delicious. Since it's a big batch, how do you recommend storing the cookies - in a tin at room temperature, or in the fridge or in the freezer?

Hi ! Yes the batches are big but they stay well in the tin , that’s where my husband keeps them and he loves to have one after dinner, i do freeze a half of them bagging them in a number that i know i can give to someone or maybe your family , they unfreeze fast. Enjoy 😉

Store in a paper bag on the counter. The bag will absorb the oil, and the cookies will get a nice crust in the outside (like biscotti, for dunking in coffee) but stay soft inside. The wine will preserve them for a while.
