The parfit in a poker face is an excellent idea. I would love to see a mystery box with leftover supermarket party foods as if you had an office party without poor Kush making everything for it to see what the guys could make from pig in blankets, tempura prawns, mini cheesecakes ect. I'm sure you can find 13 different types of frozen party food to split three ways to make the guys a box each.

Little note: those “wonton wrappers” arent actually wonton wrappers they’re spring roll wrappers. Wonton are normally yellow and size of toilet roll sheet and can be found at ur local asian store in the freezer. Have a good day if ur reading

Merveilleux! Some of them are old classics for very good reasons. Mike is always good in these - The chef gets to guide him on a very happy & unexpected journey. Festive season wouldn't be right without a parfait & other delicious comestibles. Mike was right though, having a sommelier & private chef looking after you is good work if you can get it. I think when Mike asked about not using booze, he was talking about for cultural reasons, or perhaps for those who've had substance difficulties - even if the answer is "Don't make this then", it'd probably be good to answer from that angle rather than just "Use less booze". Those prawns especially looked immense though :)

There is no alchohol left. So, you know... If your personal interpretation of "no booze" means you can't even use it for cooking (where all the alcohol evaporates), how do you even cook anything French, or Italian? Or Chinese. Japanese... They use wine like water. I haven't had a drink in two decades. Yet, my house is full of booze. Specifically for cooking.

@@Arrynek01 Yeah, I completely understand where you're coming from, but the question was in my mind from a completely straight edge kind of aspect. No booze, no matter how little you might add just for the flavor even though the alcohol will be essentially nullified in the cooking. And they didn't answer that. There has to be some kind of non-alcoholic ingredient/juice they could use to get the same general flavors. And just to be clear, I'm not against booze at all. I'm just looking at it from the very extreme level of "No alcohol, period." Which many people have for various reasons. It's silly, but this channel prides itself on cooking for all sorts, no matter how silly.

Brilliant video. As a regular and adventurous cook with a reasonable income living in London, I have the majority of the more exotic ingredients to hand or accessible. However... I think lots of people don't. I like that it's inspirational and it would be cool to see a similar video where you elevate more common staples for a party. For example, I buy cheap tinned olives and marinate them myself. It's super easy to make mini quiches etc. These are party foods ppl could save money make and better than supermarket versions

4:38 It should be noted that sodium nitrite is potentially toxic, in a "dose makes the poison" way. The small amounts present in cured meats is typically safe, but larger amounts can make you very sick or kill you outright, by making some of your hemoglobin unable to bind oxygen, causing organ damage or outright organ failure from hypoxia. So please exercise appropriate caution. (Sodium nitrate, which is also used to cure meats, doesn't have the same risks, but it has been linked to cancer.)

Just noting for anyone else with dyslexia the salt being talked about here is sodium nitrITE and the other salt mentioned is sodium nitrATE. I had to go back and forth a few times to figure out they were different words lol.

Depending on the country, what's sold as pink curing salt can have different concentrations of nitrite in it. So this can get very dangerous very quickly. Better use red food colouring!

I really love seeing Kush unleashed, for many reasons. In the first place, I find these videos incredibly soothing and comforting, partly because of the calm, controlled mood, and partly because Kush is so very easy to listen to - he's got just the right voice tone. If there was a video of him reading from the phone book for two hours, I'd listen to it. Or a cookbook, even better. As well as that, he's so very skilled at what he does, and in these videos he makes some of what he does seem accessible to the rest of us. I've never dared try to make pissaladière, but now I might be willing to risk it, because Kush has explained what to watch out for (and it looks and sounds wonderful). Definitely going to look into making tonnato as well. And those tea-soaked raisins - simple, but really, really good. I'm at a point in time when it seems as if almost everything is piling up on top of me. Moments like this help to clear that away. Thank you for that.

This video was a lot of fun. It made me miss the days when my spouse and I could take over their parents' beach house to host our friends for a delightful NYE party. I used to go all out and make lovely things for our guests. One of my favorite things to make was crab rangoons, but I could totally see myself doing the shrimp from this episode. If you can get verjuice where you live that would be a great substitute for depth of flavour, otherwise cranberry juice. You want something sweet but tannic with a touch of bitterness and sourness.

I made a channel just to say that I would love to see a series based around creating meals that elevate commonly disliked foods (think eggplant, mushrooms, squash, etc.). Out of all the videos with a live studio audience, these are the ones I think could benefit most from them. Having questions from a live audience to give Kush/Ebbers a chance to answer on the spot would be so insightful.

You made an "awful lot" about the Gewürtztraminer and that Mike wasn't a big wine drinker to just not show him tasting it and getting to hear his opinion. I'm saying this as Gewürtztraminer is my favourite white wine.

There is zero alcohol left in those shallots after 2 hours of reducing. There's probably more alcohol in dealcoholized wine, which you could probably use if the issue is what's in the bottle, not what's in the dish. Maybe a bit of balsamic glaze would add some of the body you would be missing by not using port and Madeira.

If you are one or have one in the family I'd recommend replacing the alcohol with verjuice if you can get it, cranberry if you can't. Something both sweet with sour and bitter notes. Though some recovering alcoholics do eat things with cooked alcohol in them, my sister is in recovery and is one of them.

There are millions of non alcoholic dishes you can make, not everything has to be inclusive. Or you could just google non alcoholic parfait and find hundreds of recipes like I just did.
