Ive worked in top kitchens in London and we always use our hands!! You're taught that in the kitchen your hands are the best utensils there is!! Great videos, love soul food..fine dining with 8 courses is ok for a chefs ego but if you want proper food which is all about flavour and taste this is the best along with proper Neapolitan pizza! Food is about flavour not how it's presented!!

Cooking is not only putting a pot on the stove, there's a lot more, its a wonderful mix of sensations. I"m Italian and I use my hands to mix when the recipes require it, so does my mum and used to do my grandmother. I knew an old women when I lived in Italy and every time she put her hands in the food she used to say "a cook's hands are always clean" meaning that since a cook (or every person that cooks at home) has to stick his hands in the food constantly they are washed several time.

I am a African American woman, I do feel everyone, has a right to express their opinions, and suggestions, in a respectful way whether you like the food as it is made, or you feel otherwise. However , that being said I am wondering why you come on a channel knowing clearly you will be viewing the cultural dishes of African American people and you want to hijack our recipes and turn it into your own ? Some of the comments come across as being paternalistic. For instance, who asked you , and why do you feel it is your need to do your version of a healthy redux ? Why do you feel, Soulful Ti , needs your nutritional advise ? Whatever she eats and doesn't eat is none of our concern. Now, I am not against the person who has a comment about how they personalized by adding or substituting ingredients to suit their needs. You see people make comments all the time of this nature. However , it is not the norm to tell other cooks, that make traditional recipes from other cultures such as Italian, French, what they could do to redux their cultural dishes to make them your version of healthy ; nor would you be the food police , or assume the overbearing parent role, with another adult , by monitoring what they eat, and pointing out there need to lose weight under the guise of love toward that person. Love for someone you don't even know , except by a KZbin channel ? I don't think so. I question in the first place why you choose to even look or subscribe to a channel about soul food, if you are into counting calories , and limiting your carbs and fats ? Why are you here ?

Im white and I agree with you.... lol... I love it the way it's made. It's called moderation and sometimes damn it you want some good ol' southern food. My g-ma cooked the same way. I think it's a cross between southern and soul food.Not that far off between the two if you ask me.. :)

I just took time to watch the majority of the video. Let me say her cooking has some components of traditional African American cooking but for the most part this is NOT traditional African American cooking. Unfortunately , the traditional ways are being lost . So what's not traditional here ? A lot , so here are some examples. I never saw any one ever use butter to cook collard greens. I never heard of a turkey meatloaf in traditional African American cooking. Both my grandmother and my mother, and myself would not have allowed her to stay in our kitchens, as she would be viewed as a not very clean cook. Hands all up in the food like that is just too unsanitary. You can't get your hands and nails clean enough to handle the food like that. She needs some clean disposable gloves on if you want to cook this way. My mother and I are both nurses, so that may explain our horror to her techniques , but I never saw my grandmother use her hands all in the food like that either, just gross ! There are many other things I could point out that bear some similarities but is not African American cooking. There is a traditional version of African American meatloaf , that and mainstream American meatloaf are very similar. However, I have never seen the African American version made with barbecue sauce, only topped with tomato sauce, or brown gravy. Edit : Now that is the way to make traditional African American cornbread, cast iron pan and all .

It adds moisture! Sour cream does as well, I know some people put sour cream in chocolate cake for moisture. It really helps.
