I made these this morning and wow were they ever amazing! My husband said they were the best bagels he's ever had, and I agree! The other day I tried a recipe that ended up not turning out, so I was eager to try again with a different recipe and these did not disappoint! Barley malt syrup is the BEST for bagels instead of maple syrup. They taste like true New York bagels but also add it to your water bathe because it gives them that beautiful color and texture you want from a New York bagel, DELICIOUS💞

This is my "GO TO" recipe for bagels. It's practically no fail. As mentioned in my earlier post, my Kitchen Aid stand mixer can't handle that size dough, so I have to divide in half. And when I say "NO FAIL" I mean the 3rd time I made them, I didn't make enough sourdough starter. I had only 290g, but it still turned out fine. The only thing I find is that for 12 bagels they turn out very large. I would say this recipe might make 15. Mine ended up being almost 6" across and 1 1/2" high. thank you so much for giving us this wonderful, delicious recipe.

This recipe is great-first try-success!! Thank you for the clear detailed instruction. I too wondered if I had to bring to room temp. You didn't say to do that, so I proceeded. Actually it is probably easier to restretch the holes while they are still cold and firm. Only downside is that my 5qt. stand mixer struggled to handle that much dough, so I divided in half, mixed each half separately, and then combined by hand.

Sooooooo good! I think these bagels will become my new Thanksgiving breakfast tradition. Your directions were excellent.... I started the dough yesterday afternoon and just baked them this morning! I’m from NY, but living in Denver and never though I’d be able to make NY bagels at home! I just should have made the holes again before boiling them ( which you mentioned in your directions). Some closed up, but that’s okay!

Thank you! If this is your first time making my recipe, I'd follow the instructions fully. Then next time you can rest them for at least 4 hours and see. Leaving them overnight does yield the best results though! Enjoy!

I’ve tried many sourdough bagel recipes but I really enjoy yours for the ease and the final results as they taste so much better than any others I’ve tried. I am having trouble with the shape of my bagels as they come out of the oven more like flying saucers than nice round rings. What time in the morning do you bake them as I’m trying to work out if they’re spending too long in the fridge. How can I make them nice and round rather than flat?? Thanks

Great to hear! And I'm so glad you like the flavour! I start making the bagels in the early afternoon and bake them the next morning around 8:00am. They should rise before you put them in the fridge. Maybe you need to find a slightly warmer place to help them rise. If you let them rise too long, they will go flat! I've made this mistake! So put them in the fridge after they have risen between 2-4 hours like in the video. Longer isn't good. The fridge just allows an extra slower rise. Try that and let me know! I've also got some great tricks with sourdough bread and I will be posting that soon, so stay tuned!

@@MilhaanHome thank you for responding so soon. I live in UK so my kitchen temp is around 18C. But yesterday I put them on my heated towel drying unit as I was drying some towels, I left them for 3.5hrs but think it was too long as the damp towel had dried out & I had to peel some of the bagels off the towel! I don’t have anywhere else that’s really warm but my oven says I can prove dough in there so maybe I try that? Everything else about the recipe & flavour is wonderful so I just have to find the best way to prove them. What temp do you leave them in? I did the water test & they floated but maybe I put them within my heated towel unit for 2hrs & check on them.

Aha! Ok, then it sounds like the temperature may have been too warm for too long! I live in London and leave the bagels to rise on the counter covered. That way, I can watch them after a few hours. As long as your house is a reasonable temperature, it should be fine.Try that next time. BTW, mine went flat after I left them too long by my warm water heater! Also, the bagels freeze well too! Just defrost them a few hours before or overnight in a bag ready for breakfast!

My mum is Jewish and actually called me up to drop 2 bagels off for my parents for their lunch as she thought they were delicious! I will try leaving them just on the counter & see how that goes. I’ll report back to you with the results. I do make a mean sourdough loaf & have orders to bake for friends of friends as now just need to master the bagels!! If you want to do it in one day, just start earlier in the day and follow the procedure. You can leave them in the fridge for less time, but make sure they have risen well before you put them in the fridge. Don’t skip putting them in the fridge as they’ll be easier to handle.

Hi Emma! That's a great question! By 36 hours, your bagels will likely be over-proofed so I wouldn't recommend it. The making of the bagels the day before boiling & baking isn't that long as it has plenty of resting time in between. If you haven't made them already, give them a go so you are familiar with the process. Let me know if you have any other questions!

This is a great question! I have not tried it with fresh blueberries, but if was going to try them, I would do it with the recipe as is, because the dough is quite firm. If they don't float after 4 hours, let them rise further, but no longer than 5 hours. Try again. If they still don't float, at that point, you could just continue with the process and refrigerate them: "Once they have risen, cover them with cling film and let them rest in the fridge overnight." I'm just wondering if there is a draught or if it is cold in your kitchen, resulting in the bagels not floating. Also, did you do the initial float test? Fingers crossed they turn out for you! Let me know!

That’s tricky!! If you’ve let it rise for the mentioned amount of time, it should rise and therefore float. If it doesn’t, your starter may not have been active enough. So next time, make sure it’s fed a few days ahead to make sure it’s really active. As for the current dough, you could leave it to rise for longer and then try again to see if it floats.
