Sourdough bread recipes are a dime a dozen and they all seem to contradict each other, which is SUPER confusing if you're a sourdough beginner! This is my tried-and-true BASIC sourdough loaf that keeps it simple, but will still WOW your family. CLICK SHOW MORE FOR THE RECIPE

Beginner Sourdough Bread Recipe

½ cup active sourdough starter (learn how to make sourdough starter)
1 ¼ cup lukewarm water
3 cups all-purpose flour
1 ½ teaspoons fine sea salt
In a large bowl, combine the starter and water.
Stir in the flour, and then add the salt.
Use a fork to mix everything together until it becomes stiff-- then switch to your hands to bring the dough together in a rough ball (Remember: don't overmix! This is supposed to be a no-knead-style wet dough.)
Keep the rough dough in the bowl, cover it, and let sit for 30 minutes.
After this resting time is complete, stretch and fold the dough a few times to form it into a ball. (See the video for a walk-through on how to do this.)
Cover the dough with a clean dish towel and let it rise in a warm place overnight or until doubled in size (or about 8 hours). I like to make the dough before bed and leave it in my turned-off oven (I leave the oven light on) to rise overnight.
The next morning (or after 8 hours), turn the dough out on your counter.
Fold it over a couple of times to tighten it into a ball, then let sit for 15 minutes.
After this resting period is complete, gently shape the dough into a ball once more place into a well-floured proofing basket or a bowl lined with a well-floured dish towel. Remember: don't add too much flour and do not knead the dough!
Cover and rise for 2-3 hours, or until doubled.
Preheat the oven to 450°F.
Sprinkle a thin layer of cornmeal in the bottom of a Dutch oven (optional, but this helps the bottom not to scorch)
Tip the loaf out of the proofing basket onto a sheet of parchment. Lower the parchment into the Dutch oven. Place the lid on the pot and bake for 20 minutes.
Remove the lid and bake for an additional 30 minutes, or until the loaf is deeply browned and crispy on top. (For a less crusty finish, bake for the entire time with the lid on.)
Move to a cooling rack and allow the loaf to cool completely before slicing it.

For anyone complaining this isn't the lightest, airiest, fluffiest bread, read the title. As a beginner - this was my first EVER loaf of bread. Just made it for the first time today, and turned out great. A little dense, but tasted great. I went for the easy win. I'll try one of those other knead it, rest it, knead it, rest it, repeat 20 times recipes after a few loafs. This was a great start to my bread baking adventure.

I'm in the same boat. Experimenting with different methods. A hugely over looked variable in bread baking is ambient temp, humidity or lack there of and your elevation. It's truly an individual art. There's no one right way and if anyone tells you their way is the only way they're either uneducated on bread baking or are a liar

@@streetpunk99 This is low hydration dough at 58%. If you want a more open crumb, go higher, to 70 or 75 %. It's good for beginners though, if you are not used to handling wet dough. It's best to work your way up, it is worth it.

I accidentally left my bread to Prof for 18 hours....i forgot it because i had to work. I did bake, it was so fluffy and soft. My kids even said "wow this sourdough bread is so soft" 😂 My mistake turned amazing.

Thank you for showing measurements in simple measuring cups and spoons! Every sourdough bread recipe Ive found on KZbin involves needing a digital scale to measure the weight of the ingredients. I believe the majority of people in the USA (especially my age group) do not have scales in their kitchen to measure grams. I do not understand grams. I'm old fashioned. I use simple old fashioned measuring cups and spoons. Again, thank you, so much!

Weighing ingredients is way overrated. Doesn't matter how stuff is measured, keep the proportions right and comes out same. The old, old cooks used so many parts water to so much flour. Cups made it easier.

I so agree with you Renee, at 81 years old I found it so frustrating trying to figure out all the metrics! (Same with the starters) And now I’m anxious to try my first loaf of sour dough bread!

Love your videos. Great simple recipe.I got my Sourdough starter back in 1989 while living in Alaska from a guy whose Grandfather had started it back in the Yukon Gold rush. So basically it’s been alive over 100 years. I’ve passed it on to friends and family all over the Lower 48.Sourdough is like giving a piece of yourself and everyone loves it and passes it on to others like a great big family. Just like your videos .

Jill...I truly adore your wisdom and no-nonsense approach to things. I've been using your recipes and nuggets of wisdom for years. You were the whole inspiration behind our desire for a homestead. I've made your other bread forever now and am excited to give this a try!

Gday Jill. Even though your post is 3 years old, i just want to say Thankyou! You don't have to have all the flash stuff,like a stand mixer, etc and using what you have is exactly whats needed, and bread is very forgiving in my experience. Just because its not blah, blah, etc doesnt mean its not going to be Great to eat! Especially when you made it yourself!!!! PS, The little cow sold me on trying your recipe. Cheers from Oz!!

I made this. The only thing I did differently was I don't have a proofing basket, so I used a sprayed bowl. I also had the lovely suprise of running out of parchment paper. I can't just run to the store because it's a quarantine. I used aluminum foil and it turned out awesome! It looks professional and tastes devine. This is my first sourdough loaf ever and I was expecting to fail miserably. I don't mean to brag, but this could be sold in a fine bakery. Thank you. Also that calf makes me want to move to a farm. Are you serious? That's the cutest thing I've ever seen. I'm glad he's okay!

My first couple loaves came out fine but the dough was pretty wet and I found I needed to add flour. However.....once I scooped the flour out of the jar the way she did it, the loaves starting coming out perfect. (I used to measure flour the way I was taught-spoon it into the measuring cup so it was light and airy and not packed). Perfection! Thank you so much for breaking it down and teaching us in an easy to understand manner!

I made this recipe with regular all purpose flour first, and the dough was super hard to manage. The second time I used flour especially for bread with a higher protein content and it made such a huge difference, the dough was super easy to manage and the consistency of the bread was perfect

Thank you. I will be following your tips. I’m almost 2 years into baking sourdough bread. I love it but my bread just won’t rise. My dough rises but my bread doesn’t. So someone suggested I watch your videos. And I love your little animals and your little lovely boy. Love those little boys always got a sneak in there. I’m a 75-year-old great grandmother so loved little children.

When I bake bread I put a broiler pan on the bottom rack with a cup or so of water in the pan. I put just enough water to cover the bottom of the pan. This makes a delightful crust on the bread or rolls, top and bottom. The bottom will not be rock hard and tastes delightful. I started out doing it on Kaiser rolls but now do it for everything I bake.

@@Portia620 you have to watch putting water in the oven. You want the steam but it can smoke the baking element. I like the steam but I do not like replacing the elements. I don’t use it, anymore.

Just made this recipe for my first sourdough artisan loaf and it turned out PERFECT! ❤ Only thing I did different was I added 1 tsp malted barley and I used 3/4 cup starter. Sooo good!

I got a really good “first try” result with your method. It took my starter 9 days to be ready (did a float test in a cup of water). Also, because of the timing, I would have need to get up at 2am for the second rise, so I refrigerated the dough til morning. I preheated my over to just 200 and for JUST 2 minutes before shutting off. This provided the perfecting proofing studio for my little gem. I’m enjoying it right now with my lunch. It’s got good tang, good texture and is making me quite happy. Thanks for doing this!

Justlikethat Nowadays I just take mine out the fridge about 3pm feed it about 8pm when it’s warmed up leave overnight on counter top. Next morning I take out 20g and feed it 40g four and 40 g water mix and leave till about 3pm when I start making my bread between 3pm and 9pm at 9pm I gently stretch it out fold, then make into a tight ball, place upside down in banneton stick in fridge till next morning, warm over to 230 deg with Dutch oven, when all hot take out bread from fridge up turn onto baking parchment on a small chopping board, take hold of the BP and pop into Dutch oven, cook 30 mins with lid on turn heat to 220 cook a further 10 mins. I was on holiday for most of September I fed it before I went away, came home 10 days later, fed it again left in fridge again till end of month, and it was fine, after a couple of double feeds it soon bounced back.

I am currently sitting at the table, eating a slice of warm sourdough from the first successful loaf I’ve made which was from the first successful starter I’ve started just 4 days ago. I made this! Absolutely fabulous! One thing, I used less water than the recipe called for and had to knead in an extra half cup of flour. My starter has gone crazy,,, in a good way. Any way, love the bread and love the channel.

Good to know. My first loaf is in the second rise ... the dough was a bit sticky so I used extra flour during the *countertop fold* and sprinkled extra flour on the proofing towel. I was hesitant to add more flour to the *gentle fold* part of the instructions -- too much flour could create a doorstop. We'll see! Question John: Did your loaf crumb turn out okay after adding an extra 1/2 cup of flour?

@@rozaz4754 Yes I did. I'm still struggling to work with high-hydration dough. We are at about 5,000 feet, so maybe altitude has something to do with it.

Thanks for this video, I tried it and it turned great even without a sourdough basket. I don't have a kitchen scale and use cups, so this video was great for me. Next time I will use a bit more flour.

I've been making sourdough bread for awhile now and I love learning new recipes and ways of doing things. I recently purchased dark rye flour so today's bread is going to be a dark rye sourdough with molasses. I had it once and it was dark rich with a good tooth. So fingers crossed!

Oh my gosh... thank you! I am totally new to sourdough and definitely feeling overwhelmed!! This is by far the easiest, least intimidating, recipe I have seen! I have made a few discard recipes but had been terrified to try a loaf, until I found your video!! I definitely hit the "like" and subscribed!!

Omg Jill, I am new to this channel, but just made this bread. What can I say?? It is beyond good. It is heavenly, perfect in every way. And that's coming from a german, who ingested bread with the mothermilk and loves bread with a passion, lol. Hello Jill. My DIL gave me a 8 ounce jelly jar with sour dough starter from a friend. No instructions. Just here you go mom.Good luck. I love baking, and I do make regular bread. But never have done a sourdough one. So I found your video and instantly fell in love with your methods. Like someone else said the video is 3 years old but who cares. You speak my language in simple terms that I will be able to follow. I'm still a little confused on how much water and flour to add to the starter to keep it going though. But I'll figure it out somehow. Bless you and your family. Im 74..so never to old to try something new. Hugs from the mountains of Montana. Jill H.

I just made my very first loaf of sourdough (actually any bread at all) today and followed these instructions. It turned out beautiful. I was a nervous wreck. I used the Cultures for Health San Francisco starter culture and then this recipe. I can’t thank you enough. A lot of recipes are so intimidating but this was perfect.

Oh and I’ve seen in the comments that there is confusion about heating the Dutch oven or not. I didn’t do it because she didn’t, but I did leave the top on the whole time like she suggested for a less crunchy loaf. I wish I could put a pic in here, it is absolutely perfect!

You are the first Guru to mention the 1to1to1 method. Plus recommending to stay away from bleached flour, which i was using for a short time with negative results. Thank you for showing me the better way to apply the techniques needed for better results. I am now a subscriber for good. Can't wait to check out your other videos. TY.....

Great recipe! Today I am making my third loaf. A Polish friend said it was the best bread he had ever tasted. I bake mine in a clay baker since my Dutch oven is too large. Thank you.

THANK YOU! Was able to revive some old neglected discard I had in the back of my fridge after my 2 year old starter accidentally was thrown in the trash! Your tips inspired me to try one last time and this morning I have an active, bubbly “restarted” discard, so have effectively brought my original starter back to life? Will feed a few more times before I attempt to bake a loaf. Thanks Jill - you’re my hero

I have found this to be the simplest recipe to make for a beginner. As I continue to watch her videos and create another loaf I am improving it every time I make it and getting the starter down first bcuz it’s the most important part. My first loaf prior to watching was a disaster and I wouldn’t even feed it to the birds Ha But this first loaf watching her video was auoer helpful and it came out so much better. Now I’m on to my second loaf and preparing another to do for Tomorrow. Great video

It was our very first loaf with our very first starter, and it was delicious!! I would just add a tad more salt next time So much easier to follow than other recipes!!

Here I am at 64 years old. This is my first ever time to try sourdough. Ordered your cookbook and I love it. My problem is my sourdough starter isn't getting thick like yours. It has been several days and I am making it tonight and let it sit over night. I will see in the morning how it looks.

This is a great methodology for sourdough. Much easier than some of the other recipes on KZbin. Personally I like my dough to be quite sour, so I doubled the starter and salt when I baked my second loaf. Turned out great, next time I might even use more than 1 cup of starter and probably 3x the salt.

I followed your instructions completely. I used a well know bread flour. I had a good rise for the 1st proofing. I cannot get the dough into a ball for the 2nd proofing. Too sticky and it spreads. I baked it anyway and it was delicious. We ate it all.
