Another interesting take away is that your numbers dropped more quickly with sourdough. The arch was shorter, less duration, and then dropped below what the white bread left your numbers at. So the spike is shorter and your glucose looks like it goes back to baseline where the white maintains a higher "new" baseline that is off the chart to the right, so no clue how long it lasts. That is very interesting.

@@nmpoy Hi there. Ok m not sure but just checked on KZbin again and found it. Those were my keto days, now I'm doing the carnivore. Carbs from bread cause inflamation. Meat, animal fat, salt and water. Give it 30 days. First 4-7 days are rough on the liver, converting from digesting glucose to digesting fat. I'm starting my 2nd 30 day stint today and so far I have lost 10 pounds, inflammation is gone, piles are gone, gut feels better, depression and anxiety at a 1 out of 10, down from about a 5.

I red a study years ago that was done in Italy and they found that depending on the type and amounts of different bacteria in your gut it would change how different foods affected the person. Duh right? They had some members of the study that could eat sourdough bread and it would do nothing and others it would mildly effect there insulin and blood sugar. In the end they could personalize a diet to each person just from testing the bacteria in the gut. It was years ago so I may have the country wrong but I definitely know it wasn’t done in America 😂😂😂

Don't forget that you can subtract the fiber from the carbohydrates. Also, if you make the sourdough yourself, the spike can be even less by controlling the ingredients. Type 1 Diabreadic here for reference.

I know everyone is throwing their pennies at you, but definitely would like to see what sourdough that was. Many commercial sourdough breads are simply yeasted breads with an added acid to impart a tang. True sourdough is a pain in the ass to make (or a passionate hobby) so only the true diehard bakeries are willing to put in the time requirement to make the real stuff. If it’s from the grocery store, it is likely the former kind.

I make sourdough bread with whole grain. I add 1/2 cup ground flax, chia seeds, sesame seeds, poppy seeds. I'm sure it has a slower glucose increase.

I heard a dr say that if you made whole grain sourdough bread, and cut it into slices and freeze it, it makes it more of a resistant starch, but then if you take the bread slice from freezer and toast it after that, it makes it even more resistant starch.. maybe you can test that?

The GI index makes no different as you said and is a waste of time. Because who eats a carb source on its own (apart from fruit). Bread, pasta and rice are mostly all eaten with a protein and / or a fat source dramatically lowering the numbers on the GI index.

There's a flaw in this test: The Sourdough bread has particulates (seeds) in and the white bread has no seeds. Particulates are what lowers the glycemic load of bread. A good further test would be to compare ordinary white bread with added seeds v plain unseeded sourdough bread.

What is sold today as "sourdough bread" is often not "slow rise"... which makes it very different from genuine sourdough bread. To cut costs, bakeries have found they can add just enough sourdough starter to a fast-rise yeast dough to give it a sourdough flavor... which makes it no longer gut-friendly. It takes at least 7 hours of rising for the gluten and carbs in sourdough to be lowered enough to be gut-friendly and glucose-safe. But that kind of sourdough is very hard to find. Learn to make it yourself. It's not hard.

Is that real sourdough bread? That looks like the kind of sourdough you can get at whole foods or other stores which isn't real sourdough... it just has sourdough "spice" to give it a sourdough flavor but they use the same instant yeast. Real sourdough has a wet-shine look to the crumb. The crumb of this sourdough looks dry like standard bread.

The only I would say is you need to know how that sourdough was made. They now have sourdough flavoring ro create a sourdough. If you eat sourdough make sure it is made the correct way with the sourdough starter.
