After watching your videos, it seems like maybe I don't score deep enough. My bread always tastes good but doesn’t "open up" much!

Yes….about a quarter inch deep. I also really tighten in my shaping…so it kind of explodes

I happened to be baking my latest attempt this morning and did a little better with the scoring! But tightening the shaping is another thing I need to work on - next time! Your videos were very helpful!
