The Recipe Is:
75 grams carryover (starter from yesterday)
50 grams rye flour
50 grams bread flour (or all-purpose flour)
115 grams warm water

Here! An hour late, but I made it. Do you know what homesteader means to me? It means moving across an ocean beyond all you know to a new land, to travel through that new land, and beginning to build a home under requirements. The loved ones you've left behind you miss, and it was not a time when you can make a phone call. If you were very lucky you had enough to be able to mail a letter back. Mostly you'd just work, work, and build a new life with what you hope is opportunity. Then generations later that homestead is long gone as generations grow, and move to start their lives. But like Pilgrims Promise we are just traveling through to get to our final home. We all forget that. With you showing how to make rye starter it calls up skills learned, and passed on. It's a wonderful thing to be sharing; just like the bread from a few loaves with the multitudes. Thank you for the video today!!!

I found that 'Bake with Jack' bread videos were some good help. I haven't had the determination to follow through with mine yet. Maybe next week 😂 !

Mine has finally doubled 3 days in row. I have always just kept a piece of paper towel and rubber band on my jar but haven't ever had that skin on top. But since mine has doubled or more 3 days in row I'm going be making a loaf of sourdough tomorrow. But keep in mind that my starter was started a month ago, it just wouldn't double but since I followed what you were doing for a few days its finally ready for baking. 👍

My starter is still rising very well, but where I live has been in the upper 80's most of the week. My windows are open, so more fresh air is circulating.

Today was day 2 for me. Day 1 it was tripled, day 2 doubled. I've been keeping mine in the oven mostly with intermittenly turning the oven light on/off, around 80-82 degrees. Plus I'm in the Atlanta area, probably more humidity here :) Lots of bubbles and a little crusty on top. LOL, sure did smell bad today! LOL. I was gagging!

Just an fyi about the skin forming on the top of your starter. I keep my starter in the fridge and feed it once a week. I use a Weck jar so the glass lid just ‘sits’ on the jar in the fridge and it doesn’t create a skin.

yeah, the skin i have read is normal. If you close up the jar, it wont be able to pull the natural yeast into the jar thats in the air, so trying to avoid that for now.

Why you don't do it at the end of May because it's still cold in Michigan? Right now the weather is Up And down.

Because next week i am going for a breast biopsy for possible breast cancer and in May I go in for major oral surgery to repair my teeth that were all broken to the bone from being hit head on from a drunk driver 2 years ago. I won’t be able to speak for a little while. So walking through a week long series where i talk won’t be possible. 🥹🙏🏻

I’m only saying King Arthur recipe it start with 1/8 of tsp of molasses that starter was growing very fast. Again I’m only saying I think u my need to us unbleached flour. My two cents lol ❤❤❤❤

yes. just barely wrapped around just to keep the chill off of it. i keep my house at 65-67 degrees

Need some help!!! I started my starter today, I used the 100g of flour & 125g of water & my starter wasn’t like peanut butter when I got it all stirred up, it was more loose than peanut butter. I used my scale & made sure that everything was on point for my measurements. I put brand new batteries in my scale, so it should be on point. Is this ok? I know Heather’s was very thick the 1st day?!?!?

Did you use rye flour, Susan? You should be just fine in Day 1. Your flour may be fresher than mine was. 😆👍🏻

hmmmm probably just different flour, water,...... should start to smell yeasty when it's ready to be used.

@@TheKneadyHomesteader. Sometime during the night, God flipped a switch, lol, she smells a little bit sour but yeasty. She smells SOOO good! I’ve got three more feedings then she’s going into the fridge.

I looked at the website The Perfect Loaf and it said, “During the first couple of days, there’s often a surge in fermentation activity that then drops off dramatically.” They also said it, “is probably caused by other yeast and bacteria that are initially present but eventually die off.” They advised to just continue with the process. I’m so excited watching you go through this and plane to start a sourdough starter myself. I just wanted to see the process. Thank you so much for all the work you put into your videos. We all appreciate you so much!

I had a starter in the fridg I took it out and I just added some flour and a little water. I quit going by a recipe because it would not hardly grow. Thicker starter works better. Mine did raise over night which surprised me.

Heather, mine is doing pretty much the same as yours. I have been keeping my starter in the oven with light on because I’m in Texas and the A/C has been running for some time so my house stays cool for the most part. I hope it works 🙏🏻

I didn't know you could save it in the freezer.. is there anything you had to do to get it ready for the freeze? Like feed it before and not let it rise? or did you freeze after a rise?

Let it rise part way so that you have plenty of yeast, but not all the way, which seems to help them get going again faster. Use a snack size zipper bag, put a couple of big blobs in there and press out the air as you seal it shut. Freeze. They will survive a few months without you having to do anything. When ready, mix up your flour and water, peel off the plastic, and if you didn't try to save too much, you can just put the frozen stick right into the fresh jar. It may need a couple of changes before going full strength again.

You could……. Add a tps of sugar in with your water and dissolve it . That should increase the activity of your starter sooner. BUT i’m just sayin 😉🙌🏻

Heather have you heard that the starter can be put through the dehydrator? I saw that Mrs. VIckie from Vickie's Country Home channel visited Mrs. Lori from Whippoorwill Holler channel and brought her some "dehydrated starter". Mrs. Lori said that you can just put this in a mason jar and keep it for a long period of time. It can be reconstituted and started up again at any time.

My counter is the same way.Actually my whole kitchen is off.We live in my husband's late grandparents farmhouse.It is about 80 years old so nothings level,but I love it.It has been like that in upper East Tennessee too.80 degrees for several days then this week 50s and 20s of the morning.Your starter looks great.Our dog Dixie does the same thing when she comes back in from the rain.Hopefully it will start rising better.Have a blessed day.

I love how you touched on the rise...or lack there of in the last few days. I've been wondering. Everything I've read about making sourdough, it's supposed to double in size ...or at least that's my understanding of it. I hope yours is okay ❤
