How to Make Sourdough White Bread with Yudane, this extra soft bread is delicious and very easy to make, enjoy! I A Knead to Bake
Ingredients
Yudane
60 grams (½ cup) Bread Flour
60 grams (¼ cup) Hot boiling Water
Stiff Starter or Levain
30 grams (1 tbsp) Sourdough Starter
30 grams (2 tbsps) Water
60 grams ( ½ cup) Bread Flour
Dough
300 grams (2 cups) Bread Flour
125 grams (½ cup) Milk
50 grams (1 large) Egg
45 grams ( ¼ cup) Sugar
6 grams (1 tsp ) Salt
45 grams (3 tbsps) Butter
Yudane
Levain

I made this bread today ❤️❤️ i forgot to make a stiff levain and calculated I needed 150 grams of my active sourdough starter but was then 30 grams over my hydration rate. I then added 30 grams of vegan protein powder. This worked out perfect. Especially the kneading part of your recipe is great. Thanks! This is the first time a white sourdough sandwich bread worked out perfect!!

Worked well except for my timing. I let it proof until 4am. I woke up shaped it , put lid on, and went back to bed. I woke up at 7:40 and found dough seeping out the sides of the lid. Baked it and it seeped out two crusty slices to sample. Great looking loaf after I picked off the extra. Sadly I wont get to taste it . I made it for my uncles wife for lunches.

Congratulations on your channel. So many interesting, useful and good recipes. It is really pleasant to watch your videos. Thorough instructions and easy to follow and great editing. Very knowledgeable, we can easy see you know your stuff. One of the best channels about bread and sourdough (and there are a lot out there), Truly deserved more subscribers. I am definitely going to try this one. Is there a particular reason to use the stiff starter/levain instead of a 100% hidration with this soft bread?

Hi Vânia and thank you for your comment! The reason to use a stiff starter is to have a less acidic bread and with less sugar. You can also make it with a 100% sourdough starter if you want your bread with a deeper sourdough taste! Thank you for watching!

Muchas gracias por este vídeo . Lo hice ayer y salió bien pero la masa creció tanto que le faltó lugar en el molde . La miga perfecta en el medio pero apelmazadla alrededor. Mi molde es igual al tuyo . Que me recomiendas hacer ?

Trata de reducir un poco la cantidad de la masa madre para nivelar el crecimiento y que sea más uniforme la miga

I’m trying this one out now, seems to have worked so far for me (I’m recently new at baking, but it’s became an addiction and I’ve done it every day straight it seems since starting haha!) anyways.. I just realized I don’t have a lid for my loaf pan. What should I do? Maybe put it in my cast iron Dutch oven instead? Or I’ve got a metal bowl, maybe cover it with? All suggestions and help is beyond appreciated!! ❤

Yes you can omit adding the sugar and substitute 20% of the white flour with whole wrath. The texture and flavor will change but it will be a healthier version for sure

@@AKneadtoBake Actually, I tried to repeat the word to myself, (I am half Chinese), it kinda sounds like Jong, like Kim Jong Un. Kneading this by hand is a great work out. I think I will save up to buy a stand mixer, cos I love your channel. So many interesting breads I want to try.

I don't want tangzhong technique. I prefer Yudane Japanese method. Can I replace the eggs with something else? Could you please tell me what is sourdough starter, is sold separately. Hope to hear from you. Thank you for sharing your recipe. I like the bread soft and fluffy.

You can use ground flax seed mixed with water, mashed banana, applesauce, silken tofu, yogurt, buttermilk, etc Sourdough starter is a natural yeast. You can buy it or make your own. Here is a link for my recipe and video explanation www.akneadtobake.com/post/sourdough-starter-recipe

Se ve excelente esta técnica. Tu canal es muy bueno, veo que la mayoría son con masa madre. Una pregunta si quisiera agregarle puré de auyama o calabaza, es posible? Y como pudiera agregarlo?

Si se puede tendrías que sustituir la hidratación en la receta por la misma cantidad de puré y continuar con la receta. Saludos

Can I just add the starter directly to the dough and the rest of it(flour and water). I just too lazy to make levain.

You can but to get this bread and texture you will have to use a similar loaf pan, the thing about this pan is that it is taller than the regular ones, that allows the bread to ferment and expand more which results in a less tight more airy crumb and a softer bread. If you end up using a regular loaf pan try to divide the dough in two for example for a 8 by 14 inch loaf pan

Hello I am very new to sourdough baking I have matured starter made of whole wheat flour (100%hydration ).so is it ok to use the starter to make the levain?? Do I need to keep the required amount of starter on room temperature before making the levain?? Please reply

Is it possible to omit the cold proofing? If so, what would be the proofing time?

Yes it is. The proofing time should be around 4 hours at least. It depends a lot on many factors but with a consistent warm temp it should be that. You have to wait until your dough doubles in size at least. Thank you for watching!

@@AKneadtoBake i kinda ruined the schedule. I left at at room temp. At 6 hours and its not halfway through. So i had to keep it in the fridge overnight and pull it out. I rest it for another 4hours again until it reached the top. Weirdly enough it came out perfectly just like in the video (also lucky enough that i have the same loaf mold as yours). I guess sourdough is indeed unpredictable.
