Nice video. Trim the excess skin before you SV. put all 3 in one bag. Fold top of bag over when loading. Pat skin dry before searing.

First time watching your video, like very much so I subscribed. New to sous vide, your video made it look so simple. Will be following regularly to get more of your tips. One question that I have, instead of searing it a pan, could you put it in oven under the broiler?

Eddie - Try completely cooling the thighs after they come out of the sous vide and before searing. Much better skin that way, imo.

No need to rest but patting dry with paper towels will help browning.

Looks delicious…Wow, only an hour and 20min? I have thighs marinating for tomorrow… my first time sous vide chicken… most recipes say 3-4 hours …

I can tell you from experience, any longer than 1 1/2 hrs is a waste of time unless you can’t take them out. Then it’s OK they will not over cook, until about 4hrs.
