Hainanese chicken rice is considered one of Singapore's national dish and it is eaten everywhere everyday . It is a "ubiquitous" sight in hawker centre across the country. The chicken is typically served with flavoured-packed rice, chilli sauce, soya sauce and tempered ginger sauce and usually with cucumber garnishes. NASI AYAM in Malay.....KHAO MAN KAI in Thai.... COM GÀ HAI NAM in Vietnam...Whatever you call it., its AH - MAY - ZING!

Interesting. Just wondering why you chose to fill the bag with broth instead of carving up the chicken first and vacuum sealing?

Hi Ben! Thanks for dropping by... Carving up the chicken first is a no no for this recipe.. The chicken skin is very important in this dish. The skin acts as a protective balloon that traps the chicken's natural juice and gelatin inside the chicken 's meat. As a result we will get a succulent and velvety tender meat. 😉
