I've been using South Chicago wagyu for a few years now. This is how I turn my choice cut, which is cheaper than prime cut as you all are well aware, so I put the prime rib into the freezer to get it cold but not frozen. Melt the tallow to a liquid. Let cool down just before it starts to solidify, and inject the tallow into the cold Prime Rib. It's like adding marbling to your prime rib. The tallow hardens when it touches the cold Prime Rib. The prime rib is soooo juicy at medium rare. Try it sometime.

it's not Wagu, it is Wagyu Wa means Japanese and Gyu means Cow.
