I am 65 yrs old, grew up eating fried potatoes and onions, but elders,started the potatoes first, using bacon fat/ lard...so they would get golden brown. once one side was slightly browned, added onion rings and peppers,..then continued to brown, then flipped to cook other side and onions !😊 were delicious

My Dad made those. He was from Lithuania and he included diced bacon. OMG it was so good. The key was slow cooking the potatoes for a long time with onions.

Everydays! Because I ate these almost every single day growing up. Right before you put the lid on add about a 1/2 cup of water or broth. If you don’t have the fancy lid leave a little crack. Pinch of cayenne. Oh man. I want some now and I just had some a few days ago.

Great & simple dish. Been staying away from potatoes (carbs), but may do this dish on Memorial Day. Pantry gifted me with potatoes, onions, zucchini & other fruits-won't waste it. They even had Salmon. I would add all colored peppers (got them already sliced). I like to add Paprika, smoked & garlic. Got the cast iron pan ready too. Thanks for always sharing great "feel" great dishes with us. Be blessed

Cast iron is the best!! You should also get a Dutch oven the same size so that one cast iron lid works for both. I recommend Lodge brand. You won’t regret buying these. Join Jensen from British Columbia

I really do like Dutch ovens especially for a dish like this. But this reminded me of a person I heard about that decided to try an experiment and just keep seasoning his cast iron skillet like a thousand times, and the end result Was Amazing!!!

Grew up eating a version of this. My grandmother added in sliced link sausage at the beginning to get some more of that smoky flavor, and make it more of a meal. One of the first things I ever cooked for my wife and is still one of her favorites

Perfect timing. I have some lamb I'm bout to cook up and was just wondering what I'd put with it. This made me remember I have some yukon gold potatoes on hand. Only difference, I'm adding garlic in mine. Good thing about it, skillet potatoes can be a side OR a meal on it's own.

Potatoes onions peppers are a great meal simple and easy.. I would make large batches and fry up bacon or sausage and wrap in flour tortillas and freeze… easy meal when your out ranching and farming early in the morning..

These potatoes are great. I usually put in a little extra work at the beginning by putting all the potatoes and spices in a gallon freezer bag along with a little bit of oil and mixing it up to get all the potatoes covered before dumping them in the skillet. Works for me... Great side. Thx

I would have added Roma tomato and piquin pepper. Throw those potatoes in a flour tortilla for some South Texas goodness. But I intend to try your recipe first. Great job.

I do have a mandolin. All the safety warning you hear about them, please take heed to them. Mine was delivered and I couldn’t wait to cut up some potatoes. I followed the warning and it worked great. Started cleaning it and bumped my hand into it a got a severe cut on my hand. You literally can just touch the blade and lose blood over it ! With that being said, I love mine !

I need that mandolin you have that’s for sure! I have cut myself so many times on a mandolin! Ouch! Once I thought I would have to the emergency room, but pressure and bandaid cover helped. Next day I used Manuka honey and that sealed it up right away! I’ve tried to slow myself down when I doing my meal prep, butI really love the safety grip on that one you have! Can’t wait to try this. We often have this with some sausage sliced to about a quarter inch thick, but it's not needed. The basic ingredients are all you need. We call this meal "slop", but it tastes pretty good every time. :)

And for those who have busy schedules you can find these in the freezer section of your local store under the name 'Potatoes O'Brien'. They are great for breakfast! My granny of course made homemade O'Brien potatoes (a little woman who came across the country with her parents and siblings in a old box wagon and horses) but wasn't afraid to doll up my frozen O'Brien with extra seasoning and fried in bacon fat and some crumbled bacon.... sooo good but my arteries felt like sludge afterwards!

I've been making them for decades. There's no real reason to pre-fry the onions/peppers. I like to mix them all up in a big bowl with tater slices, and throw ALL into the skillet at same time. Also, I do the lid on the skillet the opposite. Once they are cooking, I turn them, put the lid back on, rinse & repeat. Once the taters are soft, I remove the lid for 5-10 minutes so that the taters can get more crispy. Also, glad to see you leave the skins on the taters. The skins provide a lot of flavor!
