Not sure if you live close to a dollar tree but that's my favorite place. They sell beef stew for $1.25 I take 2 of those cans dump them in a casserole dish. Then take a box of jiffy biscuit mix and add enough water till it's thin enough to cover all the stew in the dish. Pop it in the oven at 350 for about 20 minutes and you're done. I have some other super cheap and easy recipes if you want to know.

When you make muffin mix, you can add extra water to stretch the muffins. I haven’t tried that trick with jiffy because I don’t like sweet cornbread. It might be worth a try.

I love cornbread. I used to make from scratch while raising my children, but just me now since my husband passed. I use Jiffy brand in several recipes and it is a time tested product. I think it is important from a nutritional standpoint to make this with the milk & egg, both of which are a protein source. They all are binding agents for the cormeal, so it won't be dry and fall apart. I understand using just water is good for people with milk or egg allergy and is necessary. Also, the cost of eggs is not lost on any of us.

if you had mayo you could use a little mayo to substitute the egg in jiffy and use water the same as you did,, i have done it before... about 1 tblsp or so

Yep, you're right about that. I've done mayo for eggs for years. The correct substitution is 3 Tbs. for each egg 🥚 😋 Learned that from my uncle who was a master chef. Saved me from starving when I was too poor to buy fancy groceries that require everything except the kitchen sink 😂 to create. Makes a heck of a sub for eggs in meatloaf (tastes better), AND use self rising flour, mayo,and milk to make a quick bread/muffins and you won't believe how delicious THAT is!!😊❤

True....mayo is made of oil and eggs. Growing up my family had a chocolate cake recipe that used mayo instead of oil and eggs. It was delicious!

I'm raising a child again, and I fixed her beany weenies regularly. She loves them, and one day, her GG came by and said, "Oh yuck, you eat that? " I said you ate that at her age 😂.. kids even as GGs have short memories! When I was a kid, my mom cooked the hotdogs in cornbread for dinner. Beans were the paired item. 2 boxes of corn bread lay the dogs in whole leaving space around like a corn bun. Yum and cheap. Thanks for helping folks eat in hard times. You're great 👍

I’ve made something similar to that but with bush’s baked beans and ground turkey seasoned the turkey with garlic powder and onion powder and the same seasoning blend peppers and onions a pinch of red pepper flakes and a pinch of salt and lots of pepper and then pour in the beans and simmer and put the corn bread mix on top and baked it. Was very tasty more on the savory side as I didn’t add any honey or any other sweetener but very good. Love all the ideas you and your family give. I have been following your channel ever since your second video and I am grateful I found your channel you are amazing and such an inspiration. ❤

Hey Brooke, $5.00 meals are a great help to so many. I used to make hot dogs and cabbage, and my Daddy would make pork 'n beans with onions, bell pepper, and ground beef. I want to challenge you to make some low-sodium/salt meals. My doctor wants me to keep my intake at 1500 mg. Spread throughout the day, that would be 500 mg per meal. Some meals I prepare don't have sodium for breakfast, so I have low-sodium meals for the rest of the day. It's tough keeping meals at low sodium/salt. I've been doing it for at least 30 years, but having fresh eyes on it would be nice. Thank you for your hard work developing ideas for your channel and being a wife and mom while keeping yourself YOU.
