What folks may miss is that when you cut the portions of meat servings you are also adding protein through the cheese in the meal. With prices so high we need to be creative in how we maintain nutrition while providing delicious meals to our families. Great job Brooke

I agree. I've changed the way I shop with inflation, I buy ahead/plan more ahead based on what's on sale. Picking up that chest freezer in 2021 has really helped.

There's protein in vegetables as well 👍and you really don't need a lot of protein!... if you eat to much protein your liver stores the rest 👍

My kids don't love red sauce, but they love buffalo sauce. I heat buffalo sauce with chicken broth, thicken it with roux or cornstarch, put that over breaded chicken, top with cheese, and bake. Serve with rice, pasta, or potatoes.

I appreciate the fact that you stretched 2 chicken breasts to feed your family. It's fine to have a larger portion once in a while but over all less is healthier. An actual portion of animal protein is the size of a deck of cards so your serving size was spot on. Plus the eggs in the coating and cheese had protein as do potatoes and green beans.

I always cut a chicken breast like Brooke and call them chicken steaks because I don’t like how they cook up whole. When they are whole I never get them done in the middle. By making steaks I can get them done.

Brooke, to make it easy, Worcestershire sauce is pronounced.. ahem... Woost-eh-sher sauce. One of those word that everyone feels scared of! My Dad used to make fun of it when my Mom used it while cooking saying , "Wore Chester's Socks?" One of my favorites.

I tried to make cut backs for January. I have already spent $220. That being said, I do not have to go back to the grocery store for 2 weeks. I was able to get some good sales and paid $24.89 for 7 1/2 dozen crated eggs.

Your meals look delish! The cracker salad must be a southern thing, I was raised in the North, and I've never heard of it. But I also don't know everyone in the North, so, who knows??! Lol. I have pans that have been loved just as much as yours, its good to know they have cousins out there:-) I will have to try the salad and the chow chow. I've always wanted to try that. Try a tablespoon of mayonnaise in your mashed potatoes, it makes them really smooth and gives great flavor but it won’t taste mayonnaise.

thanks to being sick. i haven't made it to the market in over a week. so i am shopping my pantry and freezer. sunday i fixed a ham with assorted sides, monday, i made a casserole with all the leftovers. tuesday, i cooked up 2 corned beefs that i found in the bottom of the freezer with some mashed red potatoes. today, wednesday-- i have the leftover corned beef simmering in a brown sugar and brown mustard sauce and i topped the leftover mashed taters with cheese and a bit of parsley and got them in the oven as well. found some chicken broth leftover from the ham, and i got green beans simmering in the chicken broth. family is well fed, and i got a few dollars in my account. and i didn't have to order in pizza. lol in my area--3 pizzas are 100.00 including the delivery fee.

My family is originally (a few generations back) from rural Mississippi. They often ate beans, cornbread and MAYO. I saw Collin's bowl of pinto beans and cornbread. Try some mayo mixed in next time (a big spoonful) and you'll be amazed! They also eat cornbread with mayo in vegetable soup and it is so, so good!!!

Try this with the fancy sauce! Use more mayo than ketchup not a big difference in amount. Add garlic salt, worchester sauce and plenty of black pepper. All ingredients to taste. Best chicken and fries sauce ever!! Or anything really. ❤

I make a similar 🫑 pepper, onion 🧅 and sausage dish. However I add about 3 to 4 Tbs of Apple jelly towards the end it makes a really nice sauce as it cooks down. We eat it over rice.

If you ever go to Idaho you can order your fancy sauce at restaurants. You just ask for fry sauce. I have always been told that if you ask for fry sauce in other parts of the country they don't know what you are talking about, but now I know I have to call it fancy sauce.

Your fancy sauce is very similar to the crawfish dip we make down here in Southern Louisiana, to eat boiled crawfish with. Its ketchup, mayo (normally Blue Plate), Tabasco to taste, Worcestershire sauce, and your Cajun seasoning of choice (Tonys, Slap, any of them really). My mom will add a squeeze of lemon sometimes, and that's good too. (Fun fact, Raisin Canes was started down here, and they basically just use crawfish dip, for their Canes sauce lol)

Brooke (that is how you spell it, just ask my momma) is my middle name. Idk why ppl dont like giving us our "E". I LOVE CANNING MY HAMBURGER MEAT, total game changer. How long does it take you to cook ground beef for any recipe 20-30 minutes? In 20-30 minutes plus canning time. I can do several pounds of ground beef. Then, every time you would cook, that 20-30 minues becomes under 5 minutes and makes recipes easy for weeknight prep.

Did you ever find your angel hair?? That happened to us with a pack of already cooked, but frozen, ground turkey tacos *taco meat. Both of us were like... I saw it... where IS it? Found it yesterday doing a chest freezer deep dive. In with the packs of raw frozen ground beef. Makes sense. 😆

Broooke honey,being british im gonna bave to correct you not in a bad way but toad in the hole is sausages cooked in the oven in yorshire pudding batter untill it rises and turns a lovely brown colour and the sausages are cooked completely,everything has to go in a deep metal roasting pan and once tge sausages are in tge dish,in tge batter you can not touch them in any way,but trust me it is delicious and worth a try
