I use Bambu printers p1s and a1 and last week for 179.99 I grabbed the mini. I’m waiting to see what they announce I’m hoping a large a1 . Will see.

Of the two, the SV08 is better, being that it's derived from the King of Open Source 3D printers, the Voron. I'd recommend building a Voron instead of either. The reasons to get the SV08 over building your own Voron is cost and time. If you successfully complete your Voron, it will be a much better printer than the SV08. I've built a Voron Trident and I own a Bambu X1C. My Trident is my workhorse that prints my product and the X1C is for multicolor and experimenting with different materials. In the process of building your Voron, you'll learn more about 3D printers than you could ever imagine. New mods are being created all the time by people who really know how to design 3D printers. It will always have an upgrade path if you want to modify it. The SV08 can take advantage of many of the mods being that it's based on a Voron. There's a lot of conveniences you forgo with anything that's not Bambu. I've added TAP to my Voron where the nozzle is the Z probe, but I don't have a good nozzle cleaning routine like Bambu has. Bambu is, start a print, and it takes care of everything. I have to make sure my nozzle is perfectly clean before starting every print. Not a big deal, but not as nice as Bambu. Get a good kit like one from LDO Motors. Take your time and build one of the coolest printers you could ever own. Once completed, submit a video of it to the Voron Design team to get an official serial number.
