Soya Chunks Egg Masala
INGREDIENTS:
Soya chunks-1cup
Onions-2
Tomato-2
Cashews-1Tbsp
Eggs-2
Salt
Chilli powder-1 1/2tsp
Turmeric powder-1/4tsp
Oil-2Tbsp
Cumin seeds-1/2tsp
Ginger garlic paste-1Tbsp
Coriander powder-1Tbsp
Garam masala-1/4tsp
Pepper powder-1/4tsp
Coriander leaves
DIRECTIONS:
1. Boil soyachunks for 5 mins let it sit in the hot water for 10 minutes
2. Grind tomatoes and cashews to fine paste
3. Drain the water from soya chunks, squeeze out the excess water
4. Add eggs to this, add half teaspoon chilli powder, turmeric powder, and pinch of salt
5. Heat 2 tablespoons of oil add half a teaspoon of cumin seeds
6. To this, add in the egg, soya chunk mix
7. Stir, stir fry this on high flame for 2 or 3 minutes
8. Transfer this to a bowl
9. Again, heat two tablespoon oil in the pan, crackle, half a teaspoon of cumin seeds
10. Add in chopped onions, sauté till, translucent
11. Add the ginger, garlic paste, sauté till onions are golden
12. Add in the tomato cashew paste, salt, chillipowder and coriander powder
13. Once it thickens add the fried soya chunks
14. Cook it for five minutes
15. Add some garam masala and pepper powder, garnish with some chopped coriander leaves
