Spinach and chick pea is a classic combination used in quite a number of dishes across the world. The little give away here is the addition of cumin with its Middle Eastern touch. I love the Spanish varieties of this but it's also a classic curry combination. I've just returned home from a trip to my little casa (house) in Andalusia where I cook stuff like this. It saddens me to say it but young Spaniards are eating food like this less and less. Many of them can hardly cook at all and junk food and obesity are very much on the increase. Albert is right, these dishes are fantastic, tasty and good for you. They are also very affordable. My wife and I make a dish like this for four servings and each bowl would cost less than £1 in ingredients. (The saffron is a bit of a luxury you could dispense with if you were on a tight budget.) People are struggling to feed themselves properly but great and simple dishes like this show us how it can be done and affordably so.

If I enjoy chickpeas & coriander that does not hurt anyone. No one at all. I am not a fan of parsley. As I am not serving anything up for you. I suggest you take your opinions & keep them to yourself.

I like your channel and have subscribed. It's nice to see what seem to be authentic recipes from Spain and the clear influence on Spanish food from Europe, Africa, and the Middle East. What I love about this dish is how similar it is to a chickpea curry. Similar technique, yet slightly different ingredients (Pimentón instead of Kashmiri chili powder etc). I tried your dish but made the following changes to suit me: 1. Toast the whole cumin seeds before grinding them in a spice grinder / pestle and mortar - don't buy ground spices. Ok this is a hill I'll die on. DONT BUY PREGROUND SPICES. 2. cook the tomatoes for 10 - 15 minutes until the olive oil separates, then re-emulsifies, this will deepen the flavour and (if you're using canned tomatoes) reduce the acidity. 3. Adding chopped parsley just before serving to counter the acidity and temper the garlic oil, and freshening up the sauce. This serves a similar purpose as adding fresh coriander.

I’ve made this dish twice now. Once for me and once for my family and it is delicious. My sister said she first think she has ever had such delicious garbanzo beans before. That sherry vinegar is a must! Side note - I enjoy all the videos and dishes.

Albert, it seems to me like you could take a short cut here and use the southern-Spain-style tomato sauce you introduced a few days earlier and thus reduce the number of individual ingredients and steps, assuming you had some of that sauce on hand.

I am curious if there are any traditional Spanish dishes that include lentils? If so I would love to see some lentil dishes. I recently went to a local Spanish Tapas restaurant here in the United States and had Lentejas Morunas. Yum! I wasn't sure if it was traditional or an Americanized dish.

Lentils are a big deal in traditional Spanish food. We are only three generations away from a period known as The Hunger in Spain where thousands of people starved to death in the aftermath of the Civil War. Hunger has been a part of Spanish history for a very long time. Lentils were a dirt cheap staple and the quality of the Lentils in Spain, particularly in Andalusia, are very good indeed. You would add anything you could to make them taste better such as garlic, onion, potato or a dried pepper. I know Albert cooks vegetarian but traditionally people would have added meat, if they could, in to their lentil dishes. Great lentils take on all the flavours so the modern addition of quality herbs, spices and stock mean they taste great without meat as well.

I mentioned before that tinned and jarred beans and chick peas work fine but aren't quite as good as dried ones but I really feel strongly that that is the case with lentils. Raw lentils absorb the flavour of the sauce. I think it's worth mentioning. Cheers my friend. WT

I just made a great bean, green pepper and morcilla dish (not vegetarian) and the vinegar made it. Chick peas are great and be chucked in to many great sauces with success. All the best. WT

Is this potaje native specifically to Andalucía? I studied abroad in Segovia from the US and this is the closest potaje recipe that I can find to what my host mom would make. I don’t *think* she had almonds in it. Is there a potaje native to central Spain at all? Also watching the grating of the tomatoes makes me miss pan de tomate from Andalucía 🤤
