Special Cassava Cake Recipe
Ingredients;
2 Packs of 16 oz Grated Cassava ( lightly squeeze the Cassava to remove some of the juice but not completely drain out
1 Can Condensed Milk (14.oz)
1 Can Coconut Milk (13.5 fl.oz)
1 Can Evap Milk (12fl.oz)
1/4 or 1/2 C Sugar ( depending on your sweetness adjust it )
3 Tbsp Butter melted
3 Eggs
1/2 C Shredded Cheese ( optional )
1 tsp Vanilla extract
Custard Toppings;
1/2 Can Coconut Milk
1/2 Can Condensed Milk
1 Egg
1/4 C Shredded Cheese
Greased Baking pan
Procedure;
1.) Preheat oven to 350F
2.) Drain a little bit the Cassava and place the grated cassava in a bowl
3) Add the condensed milk, evap milk, coconut milk, eggs, vanilla and the melted butter. Mix well until it incorporated or you can add in a separate bowl the rest of the ingredients except the grated cassava. Then mix the grated cassava into the liquid mixture until everything incorporated.
4.) Pour it into the greased pan and bake 45 minutes to 1 hour or until the toothpick comes out clean.
5.) While the cassava is baking. Lets make the leche flan or the toppings.
7.) In a bowl add the coconut milk, condensed milk, and egg. Stir slowly until everything incorporate.
6.) After an hour of baking cassava. Pour the leche Flan or custard mixture into the cassava cake and bake again to 20 to 30 minutes or until the toothpick comes out clean.
Enjoy baking!
Note:
If Using a Convection Oven watch carefully for the time, it might cook faster than a regular oven. Just so you won't burn your cassava cake.
