I use Image > Adjustment > Replace Color and also Color Adjustment.

The straightforward way would be to choose less saturated colors, but habit is difficult to change, so you could also try filling a "Color" or "Hue" layer (in Photoshop) with a grayish color (I usually choose brown), put it on top of your final picture, and adjust the opacity to your liking.

Don't know if this would help u or not... but the CS6 version of PS has a new feature called ... well can't remember the name of the tool.. was something "color".. is under channel mixer. This new tool gives u a loong list with preset color filters. You could use this feature + combine with the layer mode and get some nice results with only a few clicks.. is a good addition for beginers. You can also use the "HDR" tool (added on cs5) where u hav a bunch of tools togheter. Hope that helps u. Cya!
